I own the same micro plane. I saw Martha Stewart grate lemons with that plane holding it in reverse. Plane on top: lemon on the bottom. This way you can see the zest as it accumulates in the plane and judge the amount better perhaps.

Yummy classic French vinegrette. I’ve used maple syrup instead molasses..also very good. I found that you don’t really need mayo to emulsify the vinegrette. Stirring or shaking the ingredients vigorously, once the oil is added in, does the same.

There's products (Trader Joe's has one) as well as online recipes for vegetable and fruit washes. Generally recommended if not using organic. Most citrus is coated in a thin food-grade wax to preserve it. But nobody needs to eat that.

This is a great tasting dressing but, as usual, ATK overcomplicates it. Put everything (minus the garlic)in to a jar/bowl, whatever you're using, then either shake it up really well or use an immersion blender or regular blender to mix it up. Says emulsified, guaranteed.

ATK - the company - has take-home fridges for all the food prepared during their recipe development, plus excess food ingredients available for staff use. Any food that is not suitable for the take-home fridge (eg. trashed food from equipment testing) is composted. Do you know the current state (or lack thereof) of composting and recycling where JCD - the individual - lives? Regardless, the word "garbage" can be a general term for discards (skins, peels etc.) not going in the recipe. Christie used the term "garbage bowl" in a recently uploaded video that was shot in the test kitchen where they do compost. Settle down.
