Hi Trev, another of Matt’s pals here and a great admirer of your prep. I very much aspire to get somewhere near your standards one day! Little question about the Arni block; when you get them packed right though like that, would you consider cutting it down the middle in order to get two pieces to prep? I haven’t had an Arni block myself but it is very much on my finds bucket list!

Hi kevin, that is always an option but very risky you could cut through some large nice arni's in the middle. With any prep you need to weigh your options before you let rip and if possible have a good idea of what you might want the finished item to look like. I have just come through from cleaning and evaluating the block but cannot really say what's happening up here or Matt might be the last to find out...lol
