The overtone content in the Eclipse DI sounds completely off; it's way too present, as if the natural compression of the guitar mics going into your interface wasn't simulated at all. Is that something you can tweak in the settings or a limitation of the plugin?

This Is something the velocity of both the performed notes and program changes effect, along with the volume sliders and tone pots on the guitars main interface. I plan on going over things in mote detail in a later video but as stated before velocity is a HUGE factor. Higher velocity will give a more aggressive trigger blended with a quick lower velocity will give that compressed sound.

Is it necessary to humanize the velocities in the key editor rather than maxing out the humanization in the vst itself?

I think the key editor is always more powerful and flexible but inside the plugin give you more consistent results

Is there a way to adjust the tuning up to G tuning?

Unfortunately it only has tuning down 1 whole step so it goes down to C. I'd grab a demo of metal hellraser its a 9 string and might work better for that purpose
