Master Sushi Chef Hiroyuki Terada has been using Kikuichi brand knives for over 20 years, in particular Model WGS21-08-0 which has an 8" blade and has a double sided beveled edge. This is the knife you see in all of our videos. His reason for choosing this knife is for the overall feel in his hand and the perfect balance between handle and blade. He has recently added the Masahiro MH13711 which also has an 8" blade but uses the latest technology that posses a single beveled edge to put the force in the item you're cutting rather than in your fingers. Chef Hiro is excited to add this knife to his collection which is something he hasn't explored in over 20 years. These are the main 2 knives he uses.

The videographer stills does this in 2020. With his little grunts and poor cinematography, it is hard to enjoy watching Hiro at work, or David, for that matter. No offense Hiro, but stop asking a friend to do a job you need a professional doing.

Seriously, is this guy immortal? It would take 2 lifetimes to learn, memorize, and be able to explain in such detail the information this man knows on his knives from brand, style, finish, construction, application, to manufacturer legacy, location, reputation, distribution, and so on. Truly amazing. Although, often times the genius of their craft types don't make for the most efficient salesmen. Their knowledge and at times passion for the product becomes their curse by causing them to oversell what was sold in the first minute into the discussion. However, it's these type of people that create lifetime customers who value trust, experience, and confidence over fast, easy, and inexpensive shopping. I bet he has customers who will only exclusively work with him and have done so for as long as he has been in business.

Thank you David for the expert advise. After watching this video I took a road trip to that store. I didn't expect David to be the one to help me. I was the only one in the shop. He brought out all kinds of knives and gave me a detailed run down of every knife and helped me choose. He is such a humble man. I decided on a Miyabi 5000 8' chef knife and I couldn't be happier.

This guy is the MAN! I have been shopping here before watching Hiroyuki-San. I can honestly say i have left pleasantly poor sometimes. I get more than what i need every time, and they actually care about their customers. After being a chef for a few years and their customer, my knife bag was stolen, and i lost thousands of dollars in knives (tools). The staff was very prompt and helped me get what i needed to get back on my feet. When he is talking about wrapping a softer metal outside around a harder metal, it's called San Mai. Really great way to make blades. The knowledge this gentleman has is incredible. I could watch a four hour video of him talking about the different types of knife makers and how each blade is made.

Even though it's an old video, but man, the guy made me watch whole video with full attention. He possesses such in depth knowledge of knowledge, I haven't seen anyone on KZbin who with such passion explains all you need know about knife.

I just ordered 2 knives from this guy a few hours ago, lol. He is exactly this nice and this thorough. I had a special situation that included sending e-mails with picture descriptions of what I was looking for and he helped me find what I needed personally. I definitely recommend purchasing your knives or anything else you might need from this store! They're in San Diego - He stands by his product so if you have any issues - they have a great warranty setup to help you out.

I'm just a home cook who knows the value in good knives and share the same philosophy that good preparations are done by knife technique and that the attribute of sharpness is not only in how food looks but how it taste and how fast it cooks. There are cooks who would blow me out of the water with a basic el cheapo knife but there is something to be appreciated about high end knives for sure. Love these videos the guy is very well versed.

I have to comment again. I received my Minonokuni knife from this gentlemans website yesterday. I added the free sharpening option, and I have to say, it is the sharpest knife that I own. Much sharper than my Shun knife. The customer service of this company is also amazing. I had a typo on my billing address (my fault), and they called me within an hour to clear it up, and I received my knife a couple days later. The guy that does the sharpening is amazing as well. Just the weight of the knife I purchased was enough to cut beautifully through a 2 inch thick fillet like it was nothing. So if anyone is considering buying a knife from this company, I highly suggest it.

I bought a full set of Shun Reserve knives and honing steel along with matching knife block and knife storage pouch from Knife Merchants about 10 years ago. I paid half the price that they were selling for here in Australia. Great people to deal with.

I know this is an old video but I’ve got so much out of this and I’m not even a professional. Love cooking and long lasting functional tools so this video is so insightful. I hope I can find some of this stuff in the UK as I’m looking to replace my knives with stuff that will last me the next 10 years or so. Great Work!

Just visited this shop today. Holy Moly this store is amazing. Bill gave me an idea of how to keep my blades sharp, and David was kind enough to show me what the have to sell. You guys find the killer spots.

I spent a good 45mins there. So is it true Hiro can do blowfish? That would be a video to post that Id enjoy seeing. I wish i lived closer to you guys to visit and dine, but I have taken a lot of advice from the chef and made my family happy. The Wasabi video is one of my favorite, and we have a store here that sells small 1 inch roots that grind up well and taste wonderful.

Excellent! An incredible walk through the world of chef's knives. I come from the folding knife community, have watched a lot of videos/reviews, and have yet to see such a knowledgeable and comprehensive presentation. Very interesting. I make hunting and bowie type knives 5160 , D2 and other steels. I am now learning about Japanese style steel types and styles. Leaning towards single bevel. White or blue and different types very interesting presentation.

FYI Chosera stones, now called SuperStones should not be soaked period. They use magnesia bonding which I've heard will break down if left soaking.

At 6:54, he points to a Miyabi brand knife that's made my Zwilling, *that is not a Shun knife*, which is made by Kai. The Miyabi is generally sharper than the Shun classic line due to the harder SG2 Steel of the Miyabi vs the VG-MAX steel of the Shun Classic line. However, Shun does create a line of knives exclusively for Williams Sonoma that also use SG2 Steel called the Fuji line, they look incredible but are outrageously priced.

So much information! Great video. I wonder if the micro carbide knives use powdered tungsten carbide in their blades. This would make them even harder than ceramic and you would need a diamond hone to sharpen them. I will ask Dave about that. He is the expert after all. Thanks guys. :-)
