Hello! "Japanese Kitchen Tour".
This channel introduces Japanese food culture, chefs' techniques, and Japanese food.
In addition to traditional Japanese cuisine (sushi, ramen, udon, soba, sashimi, street food stalls), we will introduce a variety of gourmet foods such as local Chinese food, big-serve restaurants, Japanese street food, and sweets.
This time, I would like to introduce ``TORI Nozomi'', a yakitori restaurant located in Yatabe, Taishi-cho, Ibo-gun, Hyogo Prefecture.
This is a new store that just opened in 2023.
The owner, Saki, always spends her days with a smile.
The video introduces a lot of exquisite yakitori, sake, and obanzai.

i would work 7 days a week for saki. i know what it's like to work for people who think of you as nothing more than a name on a list. seeing the notes of appreciation on her employee's paychecks and the champagne toast at the end of a good service really hit a special spot in my heart. all love and best wishes on your success saki! being able to eat at your izakaya one day would be nothing short of an honor.

Just seeing her tearing up talking about how grateful she is with the people working with her man I couldn't hold my tears back. What an amazing human being, we all need this kind of love and aura spread around the world. My dream is to travel to Japan. As a westerner the thought of eating chicken sashimi is definitely a barrier I'd need to overcome. That said, the dishes here look phenomenal! I wish Saki all the fortune and prosperity in the world, which she clearly deserves. It takes courage to open a restaurant with no experience and she looks to be nailing it! nicely done!

Same thing, the chicken we have at home is really not intended to be eaten as sashimi. It's not fresh enough, and I can't stand the smell until it's cooked. To make sashimi you need extra extra fresh chicken, and be sure of what quality you have or risk ending up in the hospital (salmonella, campylobacteria, etc.)... Not that easy on my end =$.

@@MyRealName I agree, but that's no reason to take just any chicken. Extra fresh chicken will always be more likely to be edible raw than chicken found in the supermarket. Between a chicken where you normally won't have any problems and a chicken where you are almost certain to have problems, the choice is quickly made... Afterwards you do what you want, it's your health not mine :).

Even the freshest cage free organic chicken couldn't(and shouldn't) be served like that where I live. Honestly though this seems like a very lovely restaurant and people are obviously not getting sick all the time from the food, so they're doing right with the ingredients they get. But yeah, the thought of chicken sashimi really does gross me out.

They probably just flash freeze the chickens the same way fish is processed for sushi, aged and flash frozen, thawed for use as raw sashimi. Direct from the water fish as you usually want to dry age the fish a day or two to help deepen the flavor.

When I visit Japan, I really have always wanted to visit towns and places like these. I’m sure places Tokyo and Kyoto are beautiful and also want to go there but my favorite places are small towns like these with people like her. I will definitely give TORI-Ki a try when I visit. I hope nothing but success for her and her business. Her fellow workmates are more than just workmates, they’re a family and she seems to have the talent of people gravitating towards her because of her genuine personality. がんばれ！！

Humbling and greatful are the first things that popped up. When I saw that she had hand written messages on pay envelopes that really shows she appreciates her staff and is greatful for standing beside her to help her chase her dream. She learned from her mother, in other words she has all the training should would ever need. Food looks incredible, owner is incredible, such a pure soul. I do question the chicken sashimi though, I would never try it lol.
