As a Gen X'r, I most certainly remember neck bones and potatoes being served at my maternal grandfather's house, and beef tongue was a specialty cooked by one of my aunts. Thank you for reminding me of them (both are deceased) by presenting this fabulous meal. Those short ribs and potato salad have me smiling and shaking my head.....😄😄😄 Somebody would have to be put in charge of carrying me safely over to the couch after eating all of that. 😂😂

Chef I grew up on neck bones and still cook with them to this day. I use both fresh and smoked depending on what my local supermarket may have on hand and all 3 of my children eat them. I saved the ham bone from Christmas and added fresh neckbones and cooked them, then divided the pot liquor and the meat ( I removed all from the bones after they were done) for the collard greens and black eyed peas and added them in both dishes for New Years dinner. My mom (RIP) loved beef tongue; I am not a fan but the way you presented it with that mushroom bacon gravy looked like a 5 star meal. I love beef ribs and would gladly knaw those bones lol. The entire meal was beautifully presented and your guests are in for a fantasic gastronomical experience.

Lol, My daddy would love you ...He was a butcher and we have had every kind of meat ,wild game ,turtle, rabbit,you name it we have eaten it. he BBQ just like you ,not as professional as you but he made his own grill by hand with red fire bricks .He had a sauce people would die for..My daddy taught us never to waste and always try the dish before you turned your nose up and said "we don't like that "..Well Tongue I never could do and I have tried it all 😅😅😂😂.Love me some neck bones in my greens . @bbqsouthernstyle lol..Yes daddy would be in his late 90 plus .He loved tongue .You show all of the old school cooking of different dishes .I'll tell you what I miss the most was last day of work at Emge Packing Company at the end of the year. Daddy would bring a whole hogs head home , and we would wake up the next day seeing it in the big blue enamel pan waiting to be prepared for an old-fashioned souse ..Oh ,Lord my favorite on crackers dash of Frank's hot sauce ..lol..you enjoy your evening with your family and I'll be waiting on more delicious recipes..

This is truly an amazing meal brother…I’m very familiar with mustard greens and smoked neck bones..my makes a good dish with fresh neck bones..she cooks them with onions and seasonings…and she adds rice with to make a casserole 🥘…it’s very good …and potato salad made with Duke’s mayonnaise..is a true Southern staple 😊As far as cow tongue…I’ve never had it before….I’ve been cooking for a long time…..the long of a cow tongue kind of throws me off…I’ve heard that some people use it to flavor certain dishes…didn’t know you could actually eat it….kind of looks like roasted beef…really enjoyed watching the video…you’re always spot on👍🏿

you must have a small fortune in cookers and smokers. i looked up that grill and it sells for over $2k. i guess im sticking with my Akorn. I. just bought a new grate for it that has a removable center piece so i can add wood chunks while grilling. i like to also use it as a smoker - will try your recipe with the foil on some beef ribs. they look fantastic

Yes, a small Fortune and a lot of upkeep. At times I feel they have me cooking for them. Don't forget it's not the smoker it's the cook. Your grill will do a fine job, and you don't have to include it in your will lol.

This meal is colorful and aesthetically pleasing to the eye, and salivating to the 👅, I’m sure, for most. I have never eaten these types of meats before, except I have had beef spare ribs cooked in sauer kraut. I honestly don’t think I could do the meat…but that’s just me. The way you cooked it, and then plated it was beautiful, and interesting to watch. I know it’s healthy and you’re right, not even in the same category as fast food…no comparison. I would definitely eat the heck out of the potato salad, though! That looked very good! I won’t say I would never eat the meat because we never know what life brings, and if I ever had to eat it, I’m sure I would enjoy it. I say that sparingly because, as you know, meat is not my thing! I enjoyed the video…you knocked it out of the ball park, my dear friend❣️🤗

Your condolence was warm and heartfelt, and your message a complete surprise! Thank you, I needed that❣️ I have been trying since then to respond. We’ve had family and friends in and out all day long. Finally they are all gone and I have some time to myself. The snow is coming down and I decided to stay until Tuesday, weather permitting I can go home then. Thank you for your kind, caring words regarding that, as well! I remember the Southern Georgia cold…it’s bone chilling. I hope you keep warm and cozy, too. I hope the puppies and horses are doing well. I hope your loved ones are doing well, family and friends! I’m also happy you get some free time away from the wasps, hornets, bees, bugs, etc., in order to do your garage chores…always fun doing that! There’s a reason they call those critters pests!🤭 I don’t really know what cold smoking means, but I’ll bet the neighborhood smells wonderful. Whenever I can get to Colorado in the fall, I pick up green chilies from the roadside markets and take them back to Kansas…the wonderful smell of roasted chilies drives my neighbors nuts. Now I have to bring them some, as well, but I don’t mind! I am at the safest place I know, and that’s my brother’s house. He takes good care of me. Oh yeah…I wanted to tell you that he got me an InstaPot for Christmas. I have no clue how to use it. Hay my dear, I hope you're doing ok today. By the way cold smoking is smoking meats raw with just cold smoke. It's how to add smoke to meats and cheese without cooking it. Like country hams and smoked Salmon. It's way too hot in the summertime to do. I have a video on the way soon with cold smoking. I 'm glad you're with family again and your brother sounds like a great guy. Looks like it runs in the family great people. Funerals are never a great time, but the great part is that it brings family together and makes us think what we sometimes take for granted. I cook greens in my Instant Pot along with neck bones, or ham hock or smoked turkey thighs. Back in 2016 when I first got my pot, I cooked several batches of mixed greens, only to find that they didn't taste like my grandmother's greens. I finally figured out that I needed to cook the protein first and then add the greens. Now, I add 2 cups of water to the IP, season the water with chopped onions, pepper, garlic and onion powder and add whatever meat I'm going to use, and cook for 30mins. Later, about 30 mins before dinner, I take out the meat, add the greens (usually mixed kale and mustard, sometimes collard as well), lock the lid and cook for 13 mins. I taste for salt after the 13 mins and adjust..We have as awesome Mexican market only 5 mins away, they sell whole lengua (cow tongue) and have lengua tacos!

Never been a fan of mustard greens. Always too bitter, but that may be due to preparation. Lengua, cow tongue, is also popular in tacos, which I've had. It all looks great. The neck bones may have worked wonders for the mustards; I know they are very good in collards/turnips. Great job, Pitmaster.

@bbqsouthernstyle Thanks for a wonderful show!! I recently got on the Instant Pot train, and what a wonderful invention. Made a chuck roast with carrots, potatoes, celery, and onion. Taking a tip from you, I replaced the cooking wine with a red I had on hand. From start to finish only took an hour and 25 minutes. Some of the best melt in your mouth comfort food I've ever cooked. I learned there's a vast difference, at least in my opinion, between offset and vertical smokers. While smoking a butt I learned the importance of water in drip pan. Needless to say, the pork caught on fire, which created a very charred bark. I caught it early, I believe, and was able to salvage most of it. Wrapped it in foil, put in oven, and baked it to 203. Sliced off the charred bark, and it turned out well. After that debacle, I just decided to oven bake turkey. Brining is a game changer, and I appreciate the tip. Best turkey I've ever had. I seasoned it well, threw some onions in cavity, spritzed with oil, and rocked out at 350 for a few hours. That was the most juicy, tenderest bird I've ever had. I can't thank you enough for all of your help with getting my culinary skills to another level. Also, although I've yet to try, there's also a taco that uses the meat on cow head. Rumor has it that it's the best taco on the planet. See you next time. Have a great weekend!

Your potato salad looks lovely. I use tons of miracle whip in my potato salad the key to.Not making it watery is to fold the mayo in instead of staring it. Comes out chunky but tender to the bite , rich every time.

One day my husband brought home take out from a Puerto Rican restaurant. Boy, did it look good. When I took my first bite of the meat, yikes! I squealed, is this tongue? I guess if I want to get my "down home" grub on it's going to have to be mustard greens because the prices of meats are getting crazy. Especially the cuts nobody cared for but now is the new caviar.
