Today we see how to make another rice beer ; but not using the usual method with steps or the much acclaimed Monostep method .
We will use an ancient method , using an old recipe handed down directly from CHINA !

Thanks ! May i ask, 1) when you mixed the rice and malt, is the rice still hot or need to let it cool down first - what is the temperature? When left the mixture for 12hours, will it turn bad ? 2) After filling the beer bottle and adding sugar, how long before we can taste the beer? Thank you.

Beer made with malt was rarely mentioned in ancient Chinese documents, the only few ones I know was from 200 BC or earlier. The Chinese beer was called 醴 (pronounced Li3 in Mandarin) and was made from millet and malt, because rice was not very available back then. Also, there was no hops or other herbs mentioned, which makes sense because hops was from Russia and adopted for beer in Middle Age. en.wikipedia.org/wiki/L%C3%BCshi_Chunqiu Unfortunately the recipe for ancient Chinese beer has been lost for at least 400 years, if not 1000 or more. Ancient Chinese people preferred grain wine made with 麴 (Qu2 in Mandarin, or Koji in Japanese) instead of beers with malt, because 麴 yields higher alcohol percentage and more complex flavor. en.wikipedia.org/wiki/Tiangong_Kaiwu en.wikipedia.org/wiki/Q%C5%AB However, your recipe looks good and very interesting, I'd love to give it a try.

thx for the nice video , i would like to know why dont you boil the malt first to 52 degree and after mix it with the rice, and continue the process as by normal brewing

Hi , i would like to know did u wash the malt befor you added wz cooked rice ?! Also did u add the white rice water in the 2nd pot with the malt or only the cooked rice ?!

You use fuggle hops but I find fuggle pallets how much should I use those in same manner of this recipe

You can find long grain rice in the USA at safeway just add to water and close in jar for 5 to 10 days tell root is same size rice or so test to see if grow in papper towel method first if test good root then try allot in water to malt. Make sure is brown rice its usually organic and will grow

I did not find the flower of this herb and found its leaves are the leaves suitable for making beer (Hop)

@@Spectacular-cuoredicioccolato You're welcome! Although ancient Chinese beer was lost, some East Asia countries including China use certain amount of rice in modern beer, especially light lager. Just like Americans using corn in their beer, it gives the beer a lighter and sweeter taste. Maybe not very palatable for Europeans, but not that bad to chug a pint in our hot weather.
