@@blairhoughton7918it’s pad kaprao, because kaprao is holy basil. Pad kapow is casual speak. Pad krapao is wrong and is a word that doesn’t make sense

@@blairhoughton7918a Thai person checking in 👋 it’s all about romanization. Different spellings don’t really matter since most people know what you are referring to anyway. Even some Thais can’t spell the word in the so-called authorized way 😂 Don’t sweat it!

Great video. Roti and naan are really hard to fairly judge because its obvious they are not best on their own, they require a dip/sauce/curry! No matter how good bread is, its never gonna beat a complete meal. Also I love how when babe rates the picanha as low andy says must be the chef’s fault. Such a humble chef andy!

I live in South Africa and I grow 7 varieties of basil. The plant is hard to get, but the seeds are pretty easy to find. Also basil when they're seedlings are difficult, but once they mature its super forgiving and easy to grow.

@ryanc1592 funnily enough only on my tomatoes, they tend to leave the herbs alone. But I know with some pests they'll always go for the plant they prefer so I plant some tomatoes and other fruiting plants further away from my main garden, like sacrificial lambs basically.

Some tips for Picanha (Im from RS/Brazil, and i live around 2 blocks from the first Churrascaria in the world) You said cook nice and slow, thats wrong, you should first cook the fat cap in medium heat, if its too thick you can score a little, that will make the fat liquify and baste the meat. Then you proceed to VERY high heat, and serve rare. To be fair the best way to cook it is with a rotary skewer, with very high heat and close the charcoal, that way the fat will keep rotating around the meat.

Yeap! Roti canai usually serves along with a lot of different dips. Sometime variety of curry and dhal with malaysian nasi lemak style sambal. Thank you for the effort of making this video! Love from Malaysia!

We have similar bread in south India called "porotta". Most people eat it with meat curries.

That's what I was going to say! My understanding is that roti canai is traditionally served with a curry, with even plain roti being referred to by a different name entirely. But you would know better than me :)

looks similar to Malawach (Yemeni dish also popular in Israel), usually served with crushed tomatoes dip and a spicy dip made of green peppers (zhug).

Roti Canai without Dhal curry and malaysian Sambal is not a complete dish. The 3 has to go together. Put the mix in your mouth, life makes sense again. Shout out to Andy, bought your book 👌

@@bishrrrr Roti canai was brought to malaysia from migrant workers from tamil nadu during british colonization. By 1920's roti canai was the main dish served at Indian stalls in both cities and villages throughout the Malayan peninsula.

Hello Andy! Nice to see Shashlik making it to the list. A little tip just in case you'll make it in the future: we usually eat it with vegetables and lavash (basically something like tortillas but way thinner) and with adjika or any other sauce you like. My late grandfather (who happens to be Georgian but lived almost all his life in Russia) made the tastiest shashlik I've ever eaten using only mayo and onions for marinade. But surely there are tons of kinds of marinade :) P.S.: I should also add that for us (Russians, Ukrainians, Belarussians etc) Shashlik is more like a nice tradition and the reason to gather with family or friends, basically celebrating late spring/early summer or other important occasion. In my family, when the granddad was alive, he made shashlik every time we visited him&grandma.

Amazing work. May I offer a tip when cooking chash? Try mixing with your hands extra minute or two to really smash the meat and especially the onions. You can add twice as much onion. It will do wonders. And when you cook the chash take leftover onions, throw in tin foil with some olive oil and thyme and closit to make a good seal. Throw them in the coals and you will have the most amazing roasted onions, while the meat is cooking. Cheers!

great video! for the pad krapao i would make some prik nam pla (fish sauce, lime, garlic, chilli and sugar) as condiment. really elevates the dish! also i make it with fresh ground chicken thighs at home

This, also needs some oyster sauce + soy sauce added in at the same tie as the fish sauce. and white pepper to finish. I've never seen beef gaprao in Thailand, its always minced chicken or pork.

Awesome episode and awesome cooking as well. One thing I reacted upon is that the meats get unfairly treated in the sense that you have a meat only vs full dishes, even with dumplings they had dipping sauce. Sashlik does normally get eaten with other condiments. For example if döner kebab would been on list, would you have made full döner kebab dish with veggies and sauces perhaps even with bread or meat only - although same its two totally different things. Not saying that the result would been much different, but meat only is hardly a dish.

Pad krapao is one of my fav things to make at home - I always use finely chopped chicken thigh, and it's crazy good. I'll bet it'd have scored a bit better with the chicken thigh instead of ground beef. One day, I'd like to try it with holy basil, but it's impossible to find. Killer video, Andy. Top tier content.

Thanks for the hard work! A Thai person who loves LOVES eating here. I salivated so much seeing all three Thai dishes because I like my dishes spicy and flavorful and because they are something I grew up with. Best dishes are each individual's personal list and now I'm kinda craving for some pot stickers!

I have a dumpling we make that's kind of a spin on soup dumplings and Japanese gyoza. I take our favorite dipping sauce recipe and add some gelatin, then cut the set sauce jelly into small pieces and incorporate it into a traditional pork gyoza filling before steaming or pan frying. It's absolutely incredible - 10/10 recommend!

This is a good segment. You can actually do this for each country. You can rate, say India's top 10 local foods, or Vietnam's top street food. You can do it like this one all 10 dishes in one video, or separate them into multiple ones. You get to highlight a country, and Andy doesn't just cook a specific country's best/popular dish. Andy can dive into foods that are popular in the country that other people don't know about.

They all looked amazing and delicious 😋😋 Peace and much ❤ to you and all of the team My Tip for cooking Nans, If you don't have a Tandoor or a pizza oven, but if you have a fan oven that does fan & grill at the same time, heat a cast iron pan or cast iron griddle plate at max temp on both, and you've pretty much got the same cooking environment. Please mind your hands as everything will be like handling molten lava.

I love asian style noodles and dumplings but I only like to eat them in private 😂 I have rheumatoid arthritis and I can't hold chopsticks anymore. I feel like I'd get judged in a restaurant for having to use a fork. The chefs would be like "typical f*cking American" 😂

By the way, weirdly the people who seem to obsess on chopstick use etc tend to be overly enthusiastic foreigners actually, often asking for chopsticks at times/places where even the locals dont use them. Examples include eating say pad thai in thailand where locals dont typically use chopsticks and also chicken rice in Singapore, where forks and spoon are usually used

​@@sleepteam a lot of his videos will be like 'I tried 100 ways to cook chicken' or 'testing 50 food hacks' or 'trying every fast food sandwich and ranking them'. They're not objectively bad videos but they seem a little hacky and compared to his old content which consisted of actual high quality recipes, it's a downgrade. I can't be certain but it seems like that type of video is just designed to get more clicks and make more money (which I can't really blame them for doing) but it's a worse experience for those of us who are used to their previous content

Actually amazing that pizza is number one. I love flavours, but yes, I agree. Good pizza is just amazing. So simple but so hard to do. Right now, I'm cooking either a beef satay or stir fry. Can't decide, ha ha. Great fun video.

Roti (also meaning bread) canai is my favourite bread of all time and now I know how to layer it. I can make my own, thank you 😊

garlic naan is not eaten on it's own. It always has a curry such as chicken/paneer butter masala to eat it with. Garlic naan in itself is just a bread. This is a common mistake that people in the west usually do but i hope the traditional style of eating it gets adapted soon everywhere. Also, great video!

I think they were all aware of that and said it too, I haven't been to an Indian restaurant anywhere in Germany, Italy or the UK at least, that would serve naan on its own, and don't know anyone that wouldn't have it with a curry :)

Garlic naan mopping up a good butter chicken , chicken Karahi or lamb rogan josh... Ultimate comfort food (although I favour paratha over naan😅)

Yes, same with a few other dishes in the list but they were listed by themselves so that's how we judged it.

Personally I think Roti Canai has to be served with eiter a yellow dahl and/or curry dipping sauce, if so that would be top 3 for me :) Also with the naan do you think you cooked it on too low a heat @Andy? I like the pillowy soft ones large char spots, that's my preference.

oh yeah the shashlik. The spring and summer staple here. Adding mineral or soda water (but i prefer to add something with a salt in it) would make it marinate on a RAPID pace. Like 2-3 hours and you are set. Comes in handy when you were too lazy or/and drunk the night before to do a proper recipe and you found the last piece of pork in town. Now there's a lot of 'proper' ways to make it, but my favourite is to drown cubed pork neck in mayo, and layer it up with some onions. I also like to squeeze onions directly into meat before layering. Salt, pepper, garlic powder and smoke paprika. Marinate for 12-15 hours, cook on grill and enjoy with big company of friends.

I love this video. Obviously tastes are subjective by nature & these Taste Atlas rankings changes every year (which beats me because I'm fairly certain 99.9% of all these dishes weren't created last year), so I hope everyone can just enjoy this video as it is & don't take it personal. Thanks for this, its brilliant!! I would like to suggest a perhaps more logical assignment of ranking: The first dish you judge automatically becomes #1. The next one then is judged against that, if you think it ranks higher, the second dish takes the #1 spot, if not, it takes #2. Then the third dish is again judged against #1, if you think it ranks higher, it goes into #1,otherwise keep going down until you can slot it in and everything else moves down a spot, and so on.

Some great choices. Top ten would include some or all of the asian dishes but here are some of mine, Tom yum,rissoto frute di mare,Moules mariniere,Pasta al ragu(must be fresh pasta & trad ragu) Lamb keema,Salade niceoise to name oa few. Oh & any cakes or biscuits with chocalate.😊😊😊

Great video, I really enjoyed it as I found it very interesting! I can tell you put in a ton of effort and skill, also much knowledge so thank you. Just a few things about pizza as an Italian who has worked as a baker: pecorino doesn't go on pizza margherita and I don't think it would make it better either, on 95% of italian pizzas mozzarella is the only cheese that goes on them! Also a few tips; either put your basil below mozzarella or just put it as soon as the pizza gets out of the oven (which I prefer), that way it doesn't burn but it does cook just enough thanks to the hot vapors coming from the pizza. I would also suggest you make it "ferment" (I'm not sure this term is correct since English is not my first language, but I have to admit it sounds wrong to me) in the fridge for a day or 48 hours as you did, then take it out to make it bump up* (used google translate for this, hope makes sense). So simply switch the 2 processes you made which do make sense but not much in that order. But, at the end, whatever works good and consistently for you is great, just hope this helps or is at least interesting for you or other viewers! Apart from that good looking pizza, especially considering it was cooked at home, those kinds of ovens really are the best to cook pizza at home.

Love your recipes Andy - I try to make something each week, they are fab! I can't eat garlic or onion which is a massive downer and I've tried that substitute - but in all honesty it's crap. Thanks so much for re-inspiring my love for trying new things at home 😊

Where i'm from, shashlik is more of an activity than a specific dish, it's mostly about getting together with family, grilling some meat outside and having fun. If i had to recommend a dish to replace them in this list, i'd definitely go with kazakh manti, they are one of my favorite type of dumplings and are my family's signature dish (though it's not even our nation's cuisine). They are also much simpler than most dumplings, basically having only meat, onion, salt and pepper for he filling, but this simplicity makes them so freaking perfect)

Great episode! I know you mentioned the pronunciation of basil, which wasn't at all offensive, it's your accent, but watching my subtitles go from basil, to basel, to bazl, to bazel, to bazzil was one of the funniest things ever lol
