I'm sure it's absolutely delicious, but until he has been to the american south and experienced the fried chicken prepared by a grand mother trying to one up all the others at a church event, he has no clue what he is talking about. Their spite gives them sorcerous powers of flavor.

Have to say the worst fish and chips we have ever had was in New Zealand. His recipe might be good but he needs to tell the fish and chips shops how to cook. The first place we went to really looking forward to NZ fish and chips, asked the lady what was the best fish, we are from Australia not too sure of NZ fish, she told us a name and we said yes we will have two pieces. She then told us that she didn’t have that fish, we ended up with a fish that must have bought from Coles or the like. Next was a very famous fish and chip shop on the east coast on the north island it was disgraceful full of oil, seriously threw not a bin, the bin had a lot f other dumped fish.

I'm from Sichuan and I confirm that the chef is cooking some legit Szechuan cuisine there, which is usually served in local restaurants. We usually use thinner parts of a cow like tenderloin though, and Szechuan pepper is absolutely the chef's kiss to the dish ❤❤

Chef's don't know shit that is a Strip loin not a Sir loin they are attached in the animal but are not the same mussel. Sad a butcher has to teach someone that went to school for this, but, I have broken more beef off the hook than you could count so learn what you are cooking before you cook it
