So I just spent the whole day following this recipe down to the 8 cloves, I couldn't find the same noodles but knife cut nonetheless. Anyway, it was a long, involved process and had a lot of weird ingredients I had too hunt down, but it was absolutely worth it. This was my "it's finally October hooray for fall" slow cooker experiment of the year and it was wonderful. It's a pain, but it's great. I highly recommend anyone who saw this and wanted to try it to definitely go ahead and do it. Thanks so much to you and your uncle.

Don't know how I lived without this for so long! I make dog food for 2 of our dogs kzbin.infoUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg (we have 5!) and it is so much quicker in this. Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! Still working on the vegetables, first time came out great, second time I did different ones and they were a little too mushy. Just need to adjust the time. I highly recommend this pot!!!

I just tried this recipe and it was great!! The broth flavor was really well developed. Maybe a little too heavy on the cloves and anise though - next time I might cut back a little. Or maybe I just had really potent spices? The meat I got was too lean as well - next time I am going to try ribeye with tendon!

@DM-im6rm4 жыл бұрын
Angel, a question I've been curious about: why don't you (and other Taiwanese/Chinese cooks) use the French technique of roasting the meat and bones, instead of boiling it as the first step? Both ways would clean it off, and the caramelization in roasting would seem to preserve and intensify the flavors, whereas boiling would do the opposite - at least that's what I would presume. I assume that the reason this was not done in traditional recipes is because most Taiwanese and Chinese homes traditionally did not have ovens. Or is there something I am missing here? Has anyone experimented with roasting the bones and meat first, as if you were preparing to make beef stock, French style? Thanks for your good videos.

Hey Angel, at the beginning of the video when you list out the ingredients you had 2-4 tbsp of rice wine to deglaze but in the video you said to send water. Should I use rice wine or water? Can't wait to try out your recipe. Looks so delicious! 😊
@angelwongskitchen9 жыл бұрын
Holly Ha Nguyen Yes, use rice wine to deglaze the pan when cooking the spices. Then when you transfer the spices to the slow cooker, if there's still any residual spices left you can use a small amount of water to help get all the last bits into the slow cooker. Hope this helps clarify. Let me know how it turns out :)

For anyone who wants it, I made this in the instant pot with the following modifications: 1. Pressure cook 38 min, natural release 10 min. Came out perfect. 2. Added 1 tsp Sichuan peppercorns to spices plus dry chili's. Put all spices in a cotton cheese cloth to make it easier to remove. 3. The broth was REALLY concentrated after cooking so I added another 1.5 cup of hot filtered water at the end. Hardly anyone I know uses the crock pot now with the instant pot available. So I just thought I'd share!

So yummy. It's hard to find niu rou mian in Surabaya ( Indonesia ) that's why better for me to cook by myself. Your video recipe of taiwan beef noodle soup look authentic one. I just want to ask if I cook it not using slow cooker and just simmer in the pot how long I must simmer the meat to achieved the tender and moist meat ?. Thank you Angel for your kind recipe and I hope my wife also would like to try the recipe, since We are all love this dish. Thank you.

GUNAWAN KARNATA Thanks for the note. If you don't want to use a slow cooker, that's fine too. I would recommend simmering on low heat for at least 1.5 to 2 hours (or until tender).

I tried this recipe last night! It smells so good, but i had to add more water because it was too salty and the spices were pretty overwhelming and I have had a lot of taiwanese beef noodle soup in different restaurants. Still good though! I will probably only add 1 tbspn of the beef bouillion instead of two or just 2 cups more of water.
@angelwongskitchen9 жыл бұрын
Michelle Chan Thanks for sharing. Sometimes different brands of soy sauce will be stronger/saltier than others. The one I used is more sweet in flavor than salty. I'm glad you still liked it tough, and worse case, is you can always dilute the soup with some hot water. :)

Hi Angel, This is a great recipe! I've made it countless times with my girlfriend and shared with her friends as well. Everyone loves it. I do have a question since this recipe is made with a slow cooker and the size and portions are limited to the size of the slow cooker. If I wanted to make this for a larger group in a huge pot. What would the recommended ingredient portions be? Planning on making it for about 6-8+ people. We will have to use a pot for that size. Not sure how much of each ingredient is needed.
