I help out on my grandparents farm, they own about 20 sheep as well as other animals, in the summer I help to sheer them with the traditional metal scissor like shears, it takes me ages but my grandad can do it like a pro, it does give you blisters if you do several at once but they are the savviest sheep I have ever had to deal with so we are usually only able to catch one or two (if any) at any one time. if you look like you are trying to round them up they all run off in different directions, there are a couple who enjoy playing hide and seek and there is one that bounces of a wall to get over the fence, we have no idea how it gets back in but it is always back within a couple of hours
