When you go to Appearance> Editor, what pluggin you are using to edit the code.

It's the default WordPress editor (if you don't see it, you probably have some kind of security plugin, which is disabling it)

Woocommerce comes with many different template hooks you can use, but you can also use the Divi Theme Builder to design your product categories.

No, if you keep your code in the child theme Divi update won't remove it.
