Meatballs with Marinara

Yield: 18 to 20 meatballs
Ingredients
Marinara Sauce:
1/4 cup extra-virgin olive oil
1/4 pound diced pancetta
2 large Spanish onions, cut into 1/4-inch dice
Kosher salt
4 large garlic cloves, smashed and chopped
Pinch crushed red pepper
Four 28-ounce cans Italian plum San Marzano tomatoes
Meatballs:
Extra-virgin olive oil
1 large onion, 1/4-inch dice
Salt
2 cloves garlic, smashed and chopped
Pinch crushed red pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
2 large eggs
1 cup grated Parmigiano
1/4 cup finely chopped fresh Italian parsley leaves
1 1/2 cup breadcrumbs
1 cup dill pickles, chopped
1/2 bunch fresh chives, chopped
Serving suggestion: fresh ricotta, grilled garlic bread

Slavic countries (border the north east of italy) use pickles and meat in dishes. I'm thinking of things like sloyanka. I'd imagine that North Eastern italy starts to pull in some slavic flavors. So I totally get where she's coming from, though it's way more if a slavic thing vs an Italian thing.

This title is wrong. This is a meat sauce not a marinara sauce . Marinara sauce contains no meat at all.

Pickles goes very well with meatballs. Meatballs with potatoes, gravy, lingonberry jam and pickles is a very traditional dish in Sweden.

Am i the only one who supports a pickle topping. Normally I get a slide wedge of dill in my meatball sub from Cheba hut 🍁 I support this dish and will be making it soon :)

Pickles…? No. No pickles. And ideally, you gently brown the meatballs in olive oil and they cook the rest of the way in the sauce, which is oddly missing basil.

Exactly. This is some random Americanized version of a classic dish. I can't imagine it tasted any good tbh. I've made lots of tomato sauces and it needs a lot more than just onions and salt.

@@Robinedghill No. The reactive flavor comes from cooking in cast iron, carbon steel, copper, and unandonized aluminum pans. Consider using either a stainless steel, nonstick, or an andonized aluminum pan for anything acidic. If you are using these reactive pan surfaces, a good layer of polymerized oil can protect against the acid, but it is just easier to use one of the aforementioned metals instead. Acidic tastes can be fixed with longer cooktimes and a pinch of sugar, not a reactive one.

I prefer my meatballs fried, the searing for me makes a difference in the taste of the meatball~ And I don't like pickle so that is a no no for me~

Hey, I liked her hair better, when she still had her own show, but for some reason she likes to wear her hair like this now. That's her choice. Besides, this video, and this show, is not about her hair. It's a teaching/learning lesson, for cooking, in case you're interested.
