Breakfast Potatoes
RECIPE COURTESY OF ANNE BURRELL
Level: Easy
Total: 50 min
Active: 40 min
Yield: 4 servings
Ingredients
3 Yukon gold potatoes, medium dice
2 garlic cloves, smashed
Kosher salt
3 slices bacon, cut into lardons
1 tablespoon olive oil, plus more if needed
1/2 medium Spanish onion, diced
Pinch crushed red pepper
1 red bell pepper, diced
1/2 teaspoon seafood seasoning, such as Old Bay
2 tablespoons thinly sliced fresh chives
Directions
Place the potatoes and garlic in a large pot. Cover them with water and season the water generously with salt. Bring to a boil and cook until the potatoes are fork-tender, about 8 minutes. Drain the potatoes and discard the garlic. Let the potatoes cool.
Put the bacon and 1 tablespoon olive oil in a large cast-iron skillet. Turn the heat to medium and cook, stirring occasionally, until crisp, about 5 minutes. Add the onions, some salt and crushed red pepper and saute until soft, 2 to 3 minutes. Add the bell pepper and continue to cook until beginning to soften, 3 to 4 minutes more. Add the potatoes and cook until crispy, 4 to 5 minutes, adding more olive oil if needed. Season with the seafood seasoning and sprinkle with the chives.

I learned how to dice an onion from watching this show years ago :') (I was raised on condiment sandwiches and TV dinners lol so when I moved out I had pretty much NO cooking skills to speak of 😆)

@@tiantian4290 not when you're boiling . That much salt gives enough flavor when its boiled. When boiling pasta, the water has to be as salty as sea water.

I'm a pretty decent cook, but I love watching this short videos like this to learn how others do stuff. The way Chef Anne created this was way simpler then I was taught and takes way less time. Also I learned how to properly cut an onion so I don't have to worry about the onion juice going all over while I'm cutting the full onion at once.

This recipe isn't super complicated or fancy. But you know what? I bet that most people who just started cooking will be able to master this and then branch out. I also really like her cutting techniques.

Thank You! My homefries never come out the same every time. My bacon grease no longer has a strong flavor. I always use paprika just before I remove the homefries from the pan. I like mixing over-easy eggs, and ketchup into my potatoes before I eat them. It is the egg yokes I am really after. I like mixing it all together and eating it with buttered toast.

You can learn good cookery watching this show. The contest is beside the point. I'm suspicious that ringers manage to get on the show and that bugs me. It's TV. Otherwise it's hard to believe people this goofy and dopey are out there walking around in the world.

I like breakfast potatoes. That is potatoes for breakfast served with the bacon egg and food but I like them simpler and larger say 1+ inch. That way they are potatoes. Otherwise they are a side dish.

@@hongmeizhang6054 you definitely need to learn to cook with cast iron! They are the best for all cooking and last forever! Any and all non-stick pans have an "expiration date"... that coating will wear off at some point.

Leftover French Fries (Chips, for our friends across the pond), cut across at 1/2" lengths, and heated in a skillet with a bit of oil, make great hash browns, or, add chopped up roast beef or other meat to make great hash! Add tiny cubes of any leftover root veg to your hash (beets, turnips, carrots etc), too!
