Making contract with gold at the beginning and at the end isn't practical. Inflation is also not merely determined by central bank policy. Price movements have always existed whether there's interest or no interest. If you obtain a loan with reference to gold...something that isn't legal tender, then the lender is taking serious risk as to whether they'd get money back.
