Very daring that you crack and separate your eggs over the one bowl. I always use one bowl for the yolks, one for the whites, and one bowl that I crack the eggs over and isolate each egg's white before adding it to the others. That way, if I get a piece of eggshell in the bowl, it's easier to see and remove. It also helps prevent you from ruining/wasting all your egg whites because a yolk broke in them.

I was listening to a podcast that said, “it’s important to live life by design rather than emotion. Basically, sticking to a routine is what allows us to be the healthiest version of ourselves (especially when you're fighting these demons ex. OCD for me). I’ve had to overhaul how I approach taking care of my brain (exercise, journaling, studying etc) by practising mediocre consistency. Now I try to put in consistent 50-60% effort into my habits - to make sure I do it I began recording it and posting it on YT. Historically I have a habit of going too hard, not being able to sustain the Herculean effort, giving up and hating myself. So now I’m trying to give a small, consistent mediocre effort everyday. And its crazy how it adds up. Finally i feel regulated enough to begin the journey of learning how to cook! I’m glad I learned about learning slowly because otherwise I would never feel brave enough to tackle a recipe.

Another informative and wonderful episode! I think the secret to the soufflé’s height is the fact that you warmed the eggs in hot (not boiling) water for 10 minutes before adding them the the mixture. For a period of time, my pop-overs just wouldn’t rise in the oven. I thought is was the trays I was using so I bought get different set. No luck with that adventure. Finally I was watching a KZbin video which suggested the warming of refrigerated eggs and that solved the problem! My popovers now definitely Pop-Over!

You can make your own vanilla extract for way cheaper then you can get it in the store. Take a handle of your favorite alcohol I use either vodka or spiced rum, add about 12 vanilla beans and let it sit in your pantry for a couple of months shaking it occasionally then you have vanilla extract. The longer it sits the more vanilla flavor. Then when you finish a bottle take the vanilla beans out and pop them in some sugar for homemade vanilla sugar.
