One of the best lessons I learned in hotel school was to always read the entire recipe first and make sure you understand every step and can visualize yourself doing it. Then do the "mise en place", which is to bring out and measure up every single ingredient and tool you will need and get rid of everything else. Now you have a good idea what you will be doing and what you will be doing it with, and all is within easy reach (including the cloth on which to wipe your hands, of course!), and any cooking project becomes soooo much easier :D

Sadly, the one skill that still evades me is suffering fools gladly...

tip always grease pans first and when folding in egg whites fold in a little egg white first then rest that way egg whites get folded in properly.

@10:43 to save this you add white chocolate to the mix. White chocolate is the fat that has been removed from the chocolate making process. The issue is the the chocolate molecules have separated due to the heat, white chocolate will enable the chocolate to adhere and realign the molecules. Rule of thumb, when purchasing chocolate, verify the chocolate have a high cacao content and always purchase white chocolate, preferably from the same manufacture of the chocolate.

I'm many years in the future.. stir and spill... that is my life and Jaimie's apparently. Like if my kitchen isn't a mess when I make anything it's like what is even happening, it's an Elden Ring Life. Love seeing the process of how he improves to be honest. The potential was always there. Period. Mistakes and all, he owns them like a boss. Truly dominates every recipe as he goes along. I think we can all see the influences but at the same time he has made his channel and vids his own. And he should be proud.

A baker who uses a stand mixer should have a pouring shield attached to the mixing bowl to make adding ingredients safer and easier to do. Better yet, get two, one for dry ingredients and one for wet. You also need a cake lifter so you can do that plate switching trick cooler!

Hi Jamie a little tip, weigh flour on a piece of greaseproof paper, then when you add it you can bend the paper to form a little chute and you dont get flower everywhere. I see you used CoOp chocolate there so Im assuming you are in UK?

Every time something doesnt want to mix, try adding some egg yolk. if its already ruined trust me. Its worth a try. Egg yolk is an emulcifier and can bind things together when split, which is what that looks like. I loooove my egg yolks...

Cadbury flake is made with seized chocolate which is why it doesn’t melt - fun fact 😁

“Like water for chocolate” is actually a phrase that refers to the fact that water for making hot chocolate must be brought to the boiling point several times before you make the hot chocolate. In the movie, it refers to how passionate the love is between the two characters before they reach the point where they can be together (and I won’t spoil the ending!)

Every oven is different. The cooking time is a guideline but not hard and fast. Check your cake initially after 1/3 of the time has past then every 5-10 minute thereafter.

If you add a small amount of sugar from the recipe to your cocoa powder before you put hot water in it your paste will be smooth hope this helps

this is a good traditional chocolate cake (I agree we are used to metric so have to be more attentive ) the one thing that stood out for me was the recipe calling for adding boiling water to chocolate...that is a bakers no no for sure...I would not do that filling, it is overkill for me but a good frosting (maybe use it for filling or cream (a la black forest) and then a simple ganache on top is my fav. THANKS....Jamie I am a baker but now you(so much fun) have made me bored watching other cooks...lol(p.s.: my eggs were so small so I increased to 5 eggs which was good move)

Never add water to chocolate that's what my French chef told me.

Adding boiling water to melted chocolate should be done a tablespoon or so at a time otherwise it won't be accepted by the chocolate. HOWEVER, melting chocolate and adding boiling water makes a fine sauce too plus you can add booze if you like but not cups of it. :) ....and well done!

Hi! Made a blackout cake today. My cake layers were so moist tender and delicious until I was forced to cut horizontally through each cake layer. Ruined again!!! Is there a way to just bake 4 cake pans instead of two so I don't have to cut through any layers? I'm wondering if there is a solution to this problem? I HATE cutting through cake layers! But how could I have baked three 9 inch cake pans and apply pudding to each cake layer? A tall blackout cake could slosh it's way off the table. Any thoughts? Hopeless in upstate, New York.

You cook bake 2 cakes on half sheet pans, then cut out 3 rounds using the round cake pan as a guide, then crumble the rest for the final topping.

This looks awesome! I love chocolate. Unfortunately, I developed a GI thing as a part of my physical disability and I'm intolerant to certain things. I can't tolerate *actual* chocolate well except for a very small amount of dark chocolate. Also, I don't do well with dairy. Workarounds have been cocoa powder instead of chocolate (don't ask me why it's okay with that) and vegetable-based butter rather than dairy. Do you think the recipe can be rigged to suit my situation? I'd love to make something for the family for Thanksgiving. :)
