Vegan Mayo : 1/2 cup of aquafaba (liquid from a can of chickpease), 1 teaspoon lemon juice, salt, 1+1/2 cups of neutral oil. Combine the aquafab, lemon juice, salt in a small bowl. Using an immersion blender (I think you guys have it in the van?) on medium high speeds pour in the oil in a very slow steady stream. The aquafaba will start to stiffen and expand. it only takes a few minutes :) store for about a week! Love your content guys! Keep it going! Happy you feel better Eamon :) Go bec for popcorn!

I love that you guys mentioned anxiety when traveling. I'm a flight attendant and travel for a living but sometimes going somewhere alone or somewhere where you don't speak the language or anywhere you don't feel 100% confident and comfortable can be super anxiety-inducing! Traveling is like the end all be all for our generation and people only show the glamorous adventurous parts of it on social media. Even if you love traveling and do it all the time like I do its not 100% sunshine and rainbows every day and I wish more people talked about that!

Welcome to Baja California! Have a great time and use caution, but try not to stress. We are Canadians who live 6 months a year (mid Oct - mid April) just out of La Paz, BCS Mexico (this is our 5th winter). We have driven the Baja peninsula, return trips 3 times now with no issues, other than our van alternator, and have found the people friendly and helpful and the culture amazing. Just watch where you park, watch where you camp, watch out for Alto (stop) signs - they are often back from the corners or hidden behind trees. Things we would NOT recommend - boondocking alone, driving at night and trusting the policia. I am vegan though my husband isn't, and though eating out is sometimes challenging, there is usually something you can eat. (FYI - the refried beans have lard in them). Veggie fajitas with rice are a fabulous option. If you are still in Ensenada, I would stock up on anything vegan you may want and can find, because you will be dealing with basic staples for a good bit of your journey south. Lemon/lime/vinegar, soaked cashews or white beans (canned or cooked) and a pinch of nutritional yeast makes a great mayo substitute if you can't find any. We were just curious, we noticed you didn't stop to pick up your tourist visa at the border. Did you pre buy it online or get it off camera? You can pick it up in Ensenada if you missed purchasing it. Let us know if you get to La Ventana, about 40 minutes south east of La Paz in Baja Sur. A smaller town that is a really fabulous area known for kiteboarding, with safe boondocking areas, lots of fresh food AND a restaurant that is mostly vegan.

I think it's incredibly brave of you to be open and say you feel anxious, I have suffered with anxiety and panic disorder since I was young 13 and it was a real no no to admit it till fairly recently. It's great that we can be honest about it and open. I would be v anxious but I think we have to do it so it doesn't become our life instead of just part of it. By admitting we feel that way is half the battle. Becs is great she knows exactly how to deal with it and that's a massive help. Well looking forward to our trundle through Mexico, stay safe and enjoy.

Hi Lorraine no one can even imagine how it feels to have your whole body decide to kick back at you and the terrible fear it can induce, sadly I was getting older but not living so had to take control of my life before it was too late, I'm older now and although I am able to overcome a lot of the horrendous symptoms you are never 100% free of the possibility of it rearing it's ugly head without warning. I hope that life treats you kindly and anyone else who is unlucky enough to suffer with this debilitating illness. You take care and I'm happy to chat

i was born in mexico but shortly after we moved to the states, and let me tell you the amount of joy and relief we feel everytime we cross the border back into mexico is insane everytime we have to cross to or back it is so scary and raises my anxiety because like you guys said it is a completely different country and mexico isnt the safety at the moment so you’re always thinking about the what ifs but i feel like once you tell yourself its okay im going to be okay is when you can truly experience the culture and beauty mexico has to offer ❤️

I remember that one Meredith and I went to Rome for honeymoon one of my main concern supposed to safety. Little by little we got more comfortable and got over the culture shock and by the end of our steam Rome we were saying up past midnight walking tour destinations. I think it's very honest that you guys share this, because it is the realities I was traveling. And what a way to end it, with your own man made hot spring!!

You guys are so blessed to get thru customs so fast and easy. I lived in California for 30 years and was hassled every time I crossed over, like massive search of truck, bags, etc. After 5 times of that, I gave up. Never went back. Driving was stressful. Food was amazing. Shopping amazing.

It seems like most van lifers just post how great everything is without acknowledging that new places/cultures can be intimidating and the travel anxiety is real. You’ll get more comfortable in Mexico again soon, and it never hurts to be a little more on guard in a foreign country! Trust your gut and have fun!!!

I always go to Mexico over the weekend and plz be safe bcuz it’s not very safe over there and the cops will pull you over so you could give them money or they will turn you in. Also a lot of people will try to break in but that’s some things you should be aware of so you can stay safe. I recommend going to rosarito it is beautiful there. The driving is really different and hecktick you will hear a bunch of honking and crazy drivers. Also a lot of people try washing your car with dirty towels that they used on other cars and tires so there full of oil. But just tell them no and sometimes they won’t listen so keep telling them no and they will stop. Good luck and hope you guys have a really nice trip.

Hey guys... I enjoy your videos a lot. Since you're traveling again to Baja I thought I'd send you a little something to help you with your pronunciation of the Spanish language. (It's the same thing that I sent to the Nomadic Movement and Trent and Allie. Here goes...The following should help those struggling with Spanish: The pronunciation of the vowels, A E I O U, in Spanish almost never changes. That said, if you can remember that the letter A is pronounced like "ahh", the letter E is pronounced like "eh" (this shouldn't present a problem for Canadians), the letter I is pronounced like "ee", the letter O is pronounced like "oh", the letter U is pronounced like "oooh" (think tool). If you can master the pronunciation of the vowels your Spanish will improve 1000%. So repeat outloud.... A - ahh, E- eh, I - ee, O - oh, U - oooh. AGAIN.... "ahh" "eh" "ee" "oh" "oooh". Here's a little rhyme/song that will help... Ahh, eh, ee, oh, ooo el burro sabe mas que tu (A.E.I.O.U. the burro is knows more than you). Good luck and safe travels in BC.

Pretty awesome. I love in Chula Vista which is 5 minutes north from the TJ border. I go to Mexico twice a week with my family to go eat. There food culture is amazing.
