Anzac Biscuits are a true Australian tradition. Originally made to send to the Australian and New Zealand Troop during WW1..........
Today they are made to be enjoyed by everyone.

You will Need
120g / 1 cup of All Purpose Flour
200g / 1 cup of Sugar
90g / 1 cup of Rolled Oats
60g / 1 cup of Coconut
115g / 4oz of Butter
2 tablespoons of Boiling Water
2 tablespoons of Golden Syrup
1 teaspoon of Bicarbonate of Soda
Oven Temperature; 180C / 350F for 10-12 minutes

I have decided to try baking for the first time in my life, because of all the time on my hands during the pandemic. I feel like a pro, thanks to your recipe. I fell in love with these cookies that I first enjoyed in a bakery in Napa, CA. I ordered golden syrup on line, and followed your easy peasy instructions. My partner said these are better than the bakery's, and that I am his star baker! Sending your video and recipe on to my friends! Good on you, Steve

I got dried, shaved, unsweetened organic coconut and tried again. This time they came out amazing!!! I'm so pleased. They're way better than my last try. I'll definitely be making more Anzac biscuits now. They're a huge hit and taste wonderful. Thanks, Steve!

Gday Steve, I think you nailed a secret with the mix................the butter, syrup, soda mix...................I have never done that before and it makes bloody good sense. Need to make 100 of these babies for work on Thursday afternoon.

This is exactly the way it's supposed to be done; with diluted bicarb causing melted butter to froth and biscuits taken out to cool while still soft :) Thanks for simple explanation. I'm tripling ratios of ingredients and replacing castor sugar with brown sugar. Hope they work!

They’re fantastic. But adjust the temp settings in de description. Video shows 170C vs 180C in the description. My first batch came out to dark. Thank you 🙏

really looks amazing .. I'll give it a try .. can I substitute the white sugar with Demerara brown sugar, and golden syrup with maple syrup? i'm trying to avoid white sugar but would like to have the same taste and texture

You can substitute those things but it won't be a traditional Anzac, still nice though :o) With Maple you might need to increase the flour ratio a little as it's thinner..

thanks a lot for your prompt response :-) I've learnt that 1 cup sugar equals 2/3 cup of maple syrup, so I guess no need to increase flour amount .. what do you think?

Steve's Kitchen And, these are amazing! The perfect cuppa coffee accompaniment. I'm glad I used a 3qt. pot for the butter. That foaming up reaction was impressive. But I love the result.Why isn't that process used more often?

Lisa Boban It is fun Lisa and it's the traditional way for Anzacs but you are right, that method is rarely used in other cookies or biscuits.. I am glad you liked them.. :o)

It's the fairly high Sugar Fat Content, it actually would take a lot more flour and they would stay fairly thick, but it's not the way for these sweet Biscuits :o) Thanks

You can leave it out but it won't be an Anzac.. Try it though, you might be surprised.

no it wont be an anzac, but an oatmeal biscuit...i did make it without the coconut and it still tasted good..crispy on the outside and chewy soft inside..

Steve's Kitchen Hello, thank you for responding I have trying to master cinnamon bread. Whenever i make it my bread seems heavy and the cinnamon is barely noticeable. I am not quite sure if it is because I don't have a standby mixer or if it is the ingredients. From, abby

i am so excited to make these - i'm a huge Great War devotee as well, so that adds to it. only question - maybe i'm unfamiliar, but desiccated coconut doesn't seem like it's a product that's widely available in the US. would typical unsweetened shredded coconut flakes do? the texture looks like it's completely different, though - i'm prepared to chop them up a little bit to see if that helps.

Hi.. the coconut should add a flavour but not necessarily a texture, so while your shredded coconut will do, I would certainly try to make it as fine as possible, closer to sand than flour.. good luck 👍

Hi Steve, saw Anzac biscuits on a New Zealand t.v show and had to try them. Followed your recipe, when I added the wet to the dry, the resulting mixture was very wet (not like yours in the video). Not sure if I added too much butter (did measure). Instead of biscuits I ended up with a large Anzac flapjack. Taste was still awesome, really enjoyed making them and will make them again and hopefully end up with biscuit shaped biscuits. If you have any tips on rescuing a wet mixture it would be appreciated. 👍🏼

Although I do supply the cup measurements, you really do need to weigh the ingredients, to get the perfect Anzac. It maybe that you are using cups? which are so inaccurate. ?

@@Steve-OwensYou're right, I did use cup measurements, bought special cup measures from the baking shop, I'm from the UK so not used to the whole cup measure malarkey. I'll weigh out the dry ingredients next time. Will let you know if I'm more successful second time around. Many thanks

How long will these last if they're vacuum sealed? How about in the refrigerator in a container with lid? thanks anyone who can answer this. I want to make some foods that will last a few months as a way of prepping for any potential disasters.

The harlequin jacket! Do you have the jester hat with bells on it to go with that? (Just joking...) Love your recipe and explanation as to what is happening in each stage. I've only ever made Anzac bikkies with brown sugar though. Why have you chosen why sugar? Does it make much of a difference?

Yes I am .. is it because my oven doesn't have a fan in it ? Hot air not blowing can that be the reason ?

reena monteiro No, it's because somehow you made the dough too dry, adding a little extra flour will make the cookies hold the form more, less flour and they spread more, it's a very small difference though maybe 2 or three tablespoons. The fan has no effects.

Tali Lang Golden Syrup is a light form of treacle. As well as honey, maple syrup can be substituted.

Loved the recipe. Mine didn't turn out as flat as yours. Used maple syrup instead of golden syrup. Maybe that's why.

I suspect it's more likely your flour quantity was a little high? Did you use scales?

Well, having used coconut flour for coconut, it came out too dry, but a lovely flavor. However, rescue remedy now in play to improve the rest of the dough.

I had to adulterate the recipe, my apologies, but to make up for the dryness I added a small egg and some vanilla. This gave them a scone-like consistency, but they still weren't melting out. So I tried adding 1/4 cup oil and cooking for 15 minutes at 350°F. This didn't help it spread out, but gave the biscuit a nicer toasty look. So even though my first attempt fell short, I still managed to turn out a biscuit that was still a hit. Next time I'll try our American shredded dried baking coconut and grind it finer in the blender first and hopefully that will do the trick.

Out of the 3 variations I tried, the first one still tastes best, even though it's too dry, so off to the store today to get some coconut and give it another go.

this chefs tunic has far more in design commons with an early court jesters costume of the late mediaeval periods of the venetian dojes kings queens court & entertainment arts! although the pointy tri point hat is missing and long winkle picker shoes!!

Steve's Kitchen i shall soon be over to personally inspect your work!! & tunic high fashion choices!! those anzac biscuits look quite nice i may give them a wazz tmw!! whilst dressed in far more proper formal chefs attire of cse!! we have such a long way to go to truly make australia cultural! i hear elvis presley impersonator festival in the towns around sydney this year is massive interests by a recession hit public is going pretty big this year!! generates 31m $$$ ozzy bucks!! sounds like a good festival to sell some anzac biscuits!!

Actually, as a Clinical Psychologist, and an ex-chef, I looked into the history of the ANZAC Biscuit and came up with an astonishing detail. First, let me say that like many things, people just copy down and publish what preceded their own publication, which, incidentally, my first international publication was based upon. Somebody, a person unknown, did that with the ANZAC Biscuit and like blind sheep, everybody followed suit. Sorry, but all made the same mistake by copying and publishing incorrect information. (Even Wikipedia has it wrong.) When I contacted the National Army Museum in Canberra, the staff conducted research and informed me that they have no record of any kind of such biscuits ever being at Gallipoli. However, they informed me that the biscuits were often eaten at public events such as galas, fetes, parades, and other public events, and the proceeds were given to support the war effort. Both the Australian and New Zealand governments legislated them to be only called biscuits as the word cookie is not used in British, Australian or New Zealand English but is from the U.S.A. The weights and volumes are NOT interchangeable! When I used the scale, the cookie “dough” was very wet, almost greasy. The cookies came out flat and delicious but I had to cool them on paper towels to make sure people’s hands weren’t shiny after eating them. I tried the recipe a second time with volume measurements and these cookies were drier and almost too dry to form into golf ball sized servings. During cooking they never flattened out and almost look like drop biscuits in America. They still tasted moist inside though.

Use the weights they are more accurate. I weigh my dry ingredients even though I use a cup to put it in the bowl, weights are essential. I only say cups to please American viewers, many of whom refuse to weight flour. As for interchangeable, weights and volume are extremely interchangeable, volume do work perfectly well for liquids and some dry goods they just don't work so well but items like flour. The only items in this recipe that I would say is essential to weigh is the flour and oats.

Critter T Anzac is an acronym for Australian New Zealand Army Corps. The recipe originated from Adelaide, Australia and was used to bake biscuits to send to the soldiers in WW1 fighting in the trenches. They were sent to both Australian and New Zealand soldiers who were close allies and fighting together. They are celebrated on Anzac Day (April 25th) every year by Australians and New Zealanders. I
