I find it amusing that all the hundreds of people on youTube making flour blends say you have to weigh it to get it exact, yet all of them are very different with their ratios and blends...and all say their flour is wonderful. I am beginning to think it is a bit like fishing- every fisher'man' tells you that their lure is the best or only thing that catches fish, but they all use different lures and they all catch fish.

Just starting my gluten free journey, to help with my Hashimoto’s symptoms. This flour blend will make my life much easier. 😊 I just went to Bob’s Red Mill and bought the flours, I love that store. It was really hard not to buy the Scratch biscuits ☹️

I hope the flour blend works well for you. If you are using Bob's white or brown rice flour, just know that it's not as finely ground as Authentic Mills. This may effect the recipe slightly, in the amount of liquid needed. And I totally agree about the Bob's Store!

You can give it a try, but the potato starch helps make things fluffy. May try subbing cornstarch or arrowroot starch for the potato.
