Thank you so much!So you know Whey protein contains casein (dairy protein!) meaning is lactos free but full of casein and for that reason people with dairy allergy reacts to it. However, there’s a new kid on the block.. ALMOND PROTEIN

Yes, that is true. For those that are lactose intolerant, however, sometimes they're not aware that whey protein doesn't have lactose in it. I list other substitution suggestions for the WPI on the flour blend page 🙂

Yeah, I don't know of a great sub for xanthan gum. But it's such a little amount that's required per serving. I hope you enjoy whatever you choose to bake 🥰

Truly appreciate all your efforts for this and sharing them with us. Is it okay to use whey protein isolate 90% in both of your bread flour blends ? Or must be 100%?

Can I use one that has a mix of whey protein concentrate and isolate? Just the isolate is so expensive 😩😩😩 oh and also would I be fine with only tapioca starch or is it important to have the combo of both potato and tapioca starches?

Hi, dear. It looks great, but may i ask you how to change the quantity of the brownriceflour?? Riceflour is rich on starch adding also potato and tapiocastarch is to much starch for my health.. I'm sorry, but when I tried to make a multigrain flour blend without starches, it worked horribly. This channel is not a gluten free channel for trying to eat healthier. It's a gluten free channel for those of us who are diagnosed with celiac or gluten intolerance and can't have things we used to be able to enjoy.

Hi, Awesome video, I was hoping you could tell me IF I could use unflavoured Whey protein powder that doesn't say isolate? Why is isolate so important? If not which one of the other Isolate powders do you recomment as the best because you didn't seem to speak very highly of the other Substitutions on your website, all of them seemed a failure..soy protein, hemp protein, pea protein, egg white protein, pumpkin protein, or vegan protein? My concern is the cost, the cheapest way to get Whey protein isolate powder in my country is 400g for the equivalent of $67 and I cant justify spending that much but desperately want to try your blend and be successful because gluten free baking has been dissapointing so far and I want to make my daughter happy and enjoy her food again. I appreciate you taking the time to reply.

I wish I could recommend something that's not so expensive, but for the best results the whey protein isolate is the way to go. However, I will tell you that it lasts a long time and you'd be surprised at how little of it you really need to mix up a batch of my flour blend. I'm constantly making a significant amount of bread flour and one 5 lb container of it lasts me over 8 months!

I've used the isolate and LOVE the results, and I'll return this wrong order to Amazon if I must, but I wouldn't be sad if it was JUST a little bit lower quality this time. haha But if it's going to be REALLY bad and I waste all my other ingredients, a heads up would be awesome. Thanks!!

Oh gosh, I didn't realize! Maybe pearl millet? You could probably use any of them I'm guessing, but I think what is common here is pearl.

I always do white rice or brown rice mixed with a a little starch and my baked goods come out perfect every time. No need for xanthan gum in my opinion it is gummy texture.

Hi, I'm looking at your gluten free all purpose flour mix on your website, and noticed that xanthan gum was part of it. I tried to make spaetzle using King Arthur gluten free flour a few times, and noticed how the texture comes out gummy and gluey compared to non-gluten free flour. I'm wondering if it has to do with xantham gum, and what happens if I omit it from your recipe.

I haven't tried to make spaetzle yet, but my guess is it would need some amount of xanthan gum to hold it together.

@@LetThemEatGlutenFreeCake Oh, I thought it was the xanthan gum that makes it more gummy. King Arthur gluten free mix already has xanthan gum in it.
