Appalachian Birthday Supper & How to Make Roasted New Potatoes

Come along as I cook a birthday supper for the girls. They turned 26! Not sure how I got old enough to have kids that old. They ask for Pumpkin Roll and Chess Cake for dessert. For the meal we had canned deer meat, roasted green beans, biscuits, and roasted new potatoes straight from our garden. The beans came from our garden too-and the blackberry jelly. Matt harvested the deer. We love eating off the land when we can here in the mountains of Appalachia.

I'll be turning 70 October 6th, and my daughter will be 51 in December! It's hard to believe how fast time goes indeed! Poem I wrote some years ago goes like this! " I look in the mirror and what do I see, but an old woman looking back at me. The girl once their has gone away and left this person whose old and grey! Where'd time go and how'd I get here so fast, Are the ego's from my mothers past! I understand now when my Mother use to say....Enjoy youth now, for it hurry's away! They may be 26, Tipper, but I bet they will always be your little girls. Though many of us have commented that they "are wise beyond their years", they can still be playful as kids at times. Tipper, I've made many a rolled cake. I sprinkle powdered sugar on the tea towel and then put the cake on then roll it up. the towel allows it to cool quickly without sticking. When you fill the cake you can use the towel to help roll it up. It works well, no worries. The squash you used was on the wet side. If you do that again spread the squash on a sheet pan lined with paper towels and blot as much moisture as possible with more paper towels. I saw that on a cooking show. You're a great mama to go all out for your girls. I wished them a happy birthday on their channel. Cheers!

I volunteer at the community garden Saturdays and learned something interesting. The pumpkin we buy is really Cushman Squadh!! We had a beautiful big harvest of it. When I was at the soup kitchen todsy I saw a tub of it from Shiloh , Our Daily Bread is a recipient of their generosity. I knew the gentleman who started it in 2009. He is no longer with us. He was a very nice, down to earth, have fun guy. I enjoy both volunteer areas. Thanks for r another great video. Happy birthday to the girls. My oldest is 60!!! Wow!! God bless🥰❤🙏

Love your meal! Although you know what your doing with the pumpkin roll- I use powdered sugar on the tea towel before turning out the cake - helps it not stick to the towel. I also roll the towel right with the cake. That way when you roll it, the space the tea towel took up can be filled with the filling. This helps keep it from cracking. Anyway - your’s look delicious. Thanks for sharing your meal.

Corie's desire to keep the meat juice from "contaminating" her biscuit reminded me of when my mother would make canned beets and the liquid would flow over to the macaroni and cheese on the plate, making it "yucky". Mom would tell us to just eat it, pointing out that "it all goes down the same stomach".

Your roasted potatoes looked so good! My daughter taught me a trick to kind of “rough up” the outsides after a quick boil. Drain the water off, leave the potatoes in the pot, put the lid on (holding it on) and give it a few shakes. The potatoes rubbing against one another & the sides of the pot does the same as scraping them one by one. But you might want to keep doing it the way you’re used to. There’s some jobs that I never take a shortcut on because it’s kind of meditative.

What a lovely dinner. I'd never seen anyone roll a pumpkin roll from the long side...more portions, I guess! When I do my pumpkin roll, I sprinkle a bit of powdered sugar on the tea towel so that the cake doesn't stick so much. If I'm doing a chocolate one, I use cocoa powder. I agree with Corrie on the butter...the more the better, especially on the spuds!! Happy birthday to the girls!!

If you mash each potato lightly with a fork before you roast them you will get those crunchy bits you love. So good!
