Join us as we make appetizers for our Annual Superbowl tradition! Here are recipes:
Caprese Sandwiches
Dinner Rolls Ingredients: Makes 24 rolls
4-5 cups all purpose flour
2 tbsp rapid rise instant yeast
1 tsp salt
1/3 cup granulated sugar
1.5 cups warm milk
5 tbsp butter-soft
1 egg
2 tbsp melted butter (to brush over rolls when baking)
Instructions:
Combine 3 cups flour, yeast, sugar, salt, warm milk, butter and egg in a stand mixer bowl.
mix with dough hook for 2 minutes
Add 1/2 cup flour to bowl and mix well
Add another 1/2 cup flour to bowl and mix well until a dough ball is formed. The dough should be sticky and pulling away from the bowl.
Transfer dough to a greased bowl and cover with towel. Rest for 30 minutes at room temperature.
Remove towel and punch dough down lightly.
Divide into 24 balls and place on baking sheet. Cover with towel and let rise for 30 minutes at room temperature.
Bake in preheated 375 Degree F oven 12-15 minutes until golden brown.
Remove rolls from oven and brush with the melted butter.
Enjoy!
How to make Caprese Sandwiches with the rolls:
Ingredients
24 Dinner rolls
Sliced tomatoes-24 slices
Baby spinach
Whole Basil Leaves
Basil Pesto
Fresh mozzarella cheese-24 slices
Balsamic glaze
Slice the dinner rolls to make the sandwiches
Lay tomato slice, basil and spinach leaves, mozzarella cheese on the bottom of sandwich roll.
On top roll, spread some pesto.
Drizzle balsamic glaze over the tomato and mozzarella.
Enjoy!
Holiday Chocolate Pudding Pie with Bananas Recipe
Ingredients:
1 large graham cracker pie crust. (You can use a regular dough pie crust if you pre-bake it for 15 minutes in 350 degree F oven until golden.)
2- (4-serving boxes) of cook and serve chocolate pudding. Or 1 large box.
(I use My-T-Fine Pudding Brand) ***DON"T USE INSTANT PUDDING!!!!!
3 and 3/4 cups of 2% milk
2 ripe bananas
whipped cream for serving
Directions:
Pour milk and pudding mix into saucepan and heat on medium burner.
Stir together while the pudding mixture heats up....you have to keep stirring it!! If you stop, the pudding will burn!
Yes, keep stirring the pudding as it heats up. This will take around 15 minutes. Keep stirring though!!! Is your arm tired? Too bad!!!! It's for the family!!! Go, go, go.....
When the pudding is at a rolling boil and thick, remove from heat.
Let pudding sit and cool for 5 minutes...stir it once in that time.
While the pudding is cooling, slice bananas into about 1/4 inch thick rounds.
Lay bananas in bottom of crust and on the sides of the crust.
When the pudding is cooled 5 minutes, pour it over the bananas in the pie crust.
Be sure to cover all the bananas with pudding!
Cover the pie with the plastic lid the graham crust came with.
(If using a regular dough pie crust, after you add the bananas and pudding, lay some plastic wrap directly on the pie.....it should be sticking to the pudding.)
Refrigerate the covered pie for at least 3 hours or overnight.
Serve with a dab of whipped cream! YUM! You will thank me for all that stirring now.
(If you used instant pudding, then just throw the pie out because it stinks. :) Seriously, cook and serve pudding is much tastier than the instant.)
Beef Burger Sliders
Makes 12
Ingredients
12 slider buns
1 LB ground beef
1/2 chopped onion
7 slices American cheese
12 Dill pickle slices
ketchup and mustard to drizzle over meat and cheese
Special Sauce: Mix the following ingredients together in small bowl.
1/2 cup Mayonnaise
4 tablespoon Dill pickle relish
2 tablespoon Yellow mustard
1 teaspoon White wine vinegar
1 teaspoon Paprika
1 teaspoon Onion powder
1 teaspoon Garlic powder
Directions:
Preheat oven 350 degrees F.
In a frying pan, sauté onions for 3 minutes on medium heat (you don't need to add butter or oil to the pan!)
Add ground beef to pan and fry with the onions until brown. You don't want the meat to be red at all.
Drain any fat from the pan.
Lay 12 slider bun bottoms on a lined tray.
Pour beef mixture over the buns and spread evenly.
Lay American cheese evenly over the meat.
Lay pickle slices over the cheese and meat. I pickle slice per bun.
Pour special sauce over the cheese and pickle slices.
Top with mustard and ketchup
Add the bun tops over the meat and cheese burgers.
Cover the tray with tin foil.
Bake sliders 15 minutes
Remove from oven and uncover.
Bake sliders uncovered another 5 minutes.
Enjoy!
