My dad and I fished brook trout streams back in the 50's-80's. We used to find feeder streams that everybody else forgot about. They were all wild trout and some streams were so full of fish we had our limits of big fish within a couple hours. There's nothing like pan fried bookies.

I recommend leaving the head on the fish to retain the moisture, while you smoke it

Great Question Jim. This was one of my first videos and I failed to show that part. If you look towards the end of the video you can see the interior had been done too. Coating the entire fish is part of the brining process.

Those are some big trout. I've been getting a lot of the tiny ones (six inchers) here in Idaho. Man, back near the Oregon coast though, they're much larger.

Jeffrey Rynearson you usually don’t catch them that big out of Georgia creeks most are hatchery trout but you can find some wild ones if you roam the woods

You are supposed to put salt and brown sugar on the trout before cooking and leave it in the fridge for about half an hour to an hour. (you dont need alot of salt) This gets all the water out, the fillets will feel diffrent, the slimey feel of the trout goes, what i do then is coat them in marmalade. Which is the best coating IMO, they glaze up with a delicious sweet citrus orange flavour.

Thank you for the suggestion. I did two versions 4 hours smoked and after the fire fell to 190 left some on to go even longer. The salt and sugar flavor was equally good on both
