Bro, this is awesome! Takes me back to my childhood in the North. If you really want the best smoked fish experience, try whitefish! Fresh water whitefish is absolutely out of this world.

This how I got in to smoking 45 years ago is with fish, I would smoke Tulip which is also known as whitefish and bullheads what a great childhood I lived. Great video well done nothing wrong with some river catfish.

Dude the length and content of this video was excellent! Showing the trip to both Chicago and Arkansas really tied the story together instead of just mentioning where you got the fish while cooking. Was that a fried catfish tail you crunched on in AR?

Best smoked salmon. Use a bone remove filled. Brine in kosher salt and brown sugar brine. Pat it dry with paper towel a bit of brown sugar on top then smoke at 160 ish for 4 hrs with 3 pans of wood chips omg my mouth is watering

Smoked a side of sockeye while I was off for two weeks... Was good but nothing like the lox wings my dad works bring home and grill. Was thinking a larger fish next time maybe and that salmon steak just convinced me. Looks amazing!

You need to book some time in Alaska, lived there for three years and still miss it! Suggest time in Homer as well as Seward, Resurrection Bay is da bomb. Deep sea fishing in the morning, fresh water in the afternoon.

Every year, my dad went to the Calumet fishery for smoked chubbs and shrimp for Christmas Eve dinner. Been there a few times myself but I'd say I've been eating their fish for over 30 years and my dad still goes there to this day. BTW, you say Calumet very funny. :)

Fell in love with smoked tuna dip on a trip to Florida and have made it a couple of times since. Very addictive. Always looked at salmon steaks with a leery eye. Now I know what to do with them. Thanks for the vid, Brad!

I think you will find that Blue Catfish are a whiter cleaner fish and less fishy tasting the most other varieties of Catfish especially the smaller blues.

Go to Colorado bend state park in Bend Texas when the white bass are spawning from lake Buchanan. You won't be sorry! My grandparents used to own it and ran a fishing camp for years! I promise you won't be sorry!

Also, is it recommended to let smoked fish cool in a fridge like you did, or did you do that to just replicate the restaurant you went to? I'm curious because I'm hoping to try this and eat as soon as the fish comes off the smoker when the juices are still kinda flowy.
