Hi, We have several smokers with our Rational ovens exactly as seen in this video and although we love the ovens we are quite dissapointed with the smoking function. We have a central kitchen that is used to prepare long cooked dishes for our nine restaurants in Luxembourg. We have found no matter what we try with the rational smoker we cannot achieve a smoke ring or a smoke taste on our meats such as Pork ribs or Beef brisket. I can see in the tutorial video above that there isnt a smoke ring which doesnt make me hopeful that our ovens will ever compare to our traditional smokers. Any help would be greatly appreciated!

I called the chef line, left a message and no one called back. This is exactly what I want to do, I don't have the USB attachment. Apparently my company got an older model Vario smoker. Any suggestions as to how to build a program to smoke brisket overnight?

They should’ve invested in a better processor for those ovens. The menu system is so laggy and frustrating to use in a busy kitchen.
