Marcella Hazan was the Julia Child of Italian cuisine. In fact, Julia once said, "Marcella Hazan is my mentor in all things Italian." Hazan's cookbook, ESSENTIALS OF CLASSIC ITALIAN COOKING, is a must-have for anyone who loves Italian cuisine. And who doesn't.

Finally got to see footage of the writer of my first Italian cuisine cookbook. She died the year this was filmed I guess? Not to be morbid (but I am), but you can tell she was at that point. Wish I can see earlier footage of her to erase this

I adore them both….absolutely adore them….but you can't smell salt content in a dish. They're incredibly talented, but not superhuman.

PC Pcray The salt content isn't what makes the sea smell like the sea. Sulfur compounds, bacteria and dead sea life are responsible for that.

Salt brings out flavors and draws out liquid from ingredients. You cannot smell the salt, per se, but you can smell whether or not the ingredients are releasing all of their flavors, which tells you whether or not you need more salt. This is especially true of alliums.

I've never seen a veal shank in a grocery store.m I suppose one must order it from a butcher, and it must be pricey.
