I make a large amount of this as my base sauce in a instant pot on high pressure for 15 mins. The. I use it for pasta sauce, as a base for Moroccan Shaksouka sauce with kofta and any other dish taht requires a tomato sauce. I just add the relevant herbs or spices and of course garlic. The onion gets so soft in the instant pot i just mush it into the sauce

I add an anchovy at the beginning as my salt. Also one garlic clove bc I could never have a sauce without it!

i've made this and it's quite good. It's so hard for me to not add garlic or basil to it though...

Can I just chop the onion beforehand instead of after?

You could, but that is not her recipe. The onion is meant to be taken out after cooking, only infusing the sauce with its flavor but not being eaten directly. Chopping it only in half beforehand allows you to easily remove it.

But, must have garlic - will make this using shallot + red pepper flake + red wine. Looks very good.

Why can't we chop up the onion before throwing it into the tomato to cook? It'd be easier to chop before.

I've watched loads of these videos and have yet to see anyone show me how to use a tablespoon to measure out the butter.......always seems to be 5 in the recipes but then they just throw in a big lump into the pot

I decided i'm calling b$llsh*t on this so we set up a blind taste test. I made three very basic tomato sauces with the most complex having just 6 ingredients and this recipe with just the three. Each sauce was made with the same volume.... Four separate individuals were used to taste test each; once on it's own and once paired with pasta. A #12 pasta was used and the same batch of pasta was paired with each sauce. I was not included in the tasting as I knew which was which but i still have an opinion.... This sauce finished 2nd of three once and 3rd of three the other three times.... I agree with the three of three. If you use crap from a can normally, or don't have everything to make a real sauce or maybe you just don't have the time... this is a great alternative to a well done tomato sauce and i was admittedly surprised at the texture and taste, but the best sauce ever?.... hardly.

Nowhere in the video does it say that this is the world's best sauce. So you kinda tested your own claim. But good for you.

You went through all that trouble to disprove something that wasn't even claimed on a topic that somehow everyone else knows is subjective. I wish I had that kind of time.

I appreciate that others would like this but not for me . It’s basically a can of tomatoes with lots of butter and stewed/boiled onions .
