I have tried this recipe 2 times. The first one, I replaced the butter with full margarine because at my place butter is expensive. Second, 80% butter and 20% margarine. All cakes rise beautifully, the texture is indeed dense but soft and moist. Thank you Apron.

I agree. As a baker I’m stunned by this method but I still want that end result so I’ll follow it anyway. I do still think they should’ve (because it’s the proper way) melted the butter and folded it in with the dry ingredients as done in fat based sponges but I mean I guess it doesn’t really matter if the end result is still appealing to me, I’ll do any method!

Hi... Mine doesn't look like as in the video when I add the butter to the whisked eggs it doesn't curdle it just in liquidy state where I am going wrong and also my batter is not as smooth also I can see the butter clumps in it.

I just tried this method with new recipe for flour and milk powder. Its turn out sooo good. The texture same as in video. Dense but moist. The only issue is I keep worry because I need to mix the flour too long because its difficult to make it homogen. Btw thank you for the new method😍

Other popular marble cake videos had thumbnails where the cake looked duller and had a drier, heavier crumb, but not here. This one looked so moist, shiny, and tender with a darker chocolate swirl, so I had to watch.

*WHY IT WAS DEFLATED* (opinion): As a baker, i think the point of whipping the eggs and sugar is to DISSOLVE THE SUGAR pretty much completrly. This is a benefit for the cake (more complicatrd indepth, but a benefit to tjings such as browning and whatnot). Yes it does deflate though. The air isnt necessarily NEEDED because this is a pound cake style. Which means DENSE. So maybe, apron purposefully deflated the egg with butter because they dont want too much air in thr batter so the cake is more dense than light (desired for a marble cake which is pound cake style as mentioned). Summary: (by what ive seen my opinion): eggs+sugar whipped to dissolve sugar immensely to contribute to certain benefits of the cake such as browning and more complicated elements… the air formed by egg+sugar was not necessary as the cake should be dense as it is pound cake style which is normally denser… so apron must have ourposefully deflated the egg+sugar with the butter…. Hope this helps! Sorrh for long text❤ and sorry for misspellings :) all just my opinion.

For me : i always add the eggs at the end before the baking, while some people will add the milk the eggs and then the flour, which makes the eggs some times over beaten and results in the cake being flat.

It is normal when multiple fats are attempted to be mixed! Totally nirmal though, can be fixed after flour! Fat from egg yolk + fat from butter = curdling, sometimes. I say sometimes because it isnt always happening, it is usually due to TEMPERATURE and/or QUANTITY. So cold butter and/or cold eggs mixed may curdle or if theres a lot of eggs or a lot of butter, may curdle. But as i said, once the flour is mixed in, it all comes togetger! It is not bad. ❤
