##Arabic Chicken Kabsa Recipe
Ingredients:
For the rice:
3 cups basmati rice
4 cups water
2 medium onions, finely chopped
1 large tomato, chopped
2 green chilies, slit
2 garlic cloves, minced
4-5 cloves
4-5 cardamom pods
3-4 cinnamon sticks
1 dry lemon (loomi)
1 bay leaf
1/2 tbsp paprika powder
A pinch of turmeric
1/2 tbsp Kabsa masala
1-2 tbsp tomato paste
1/2 cup oil
1 grated carrot
1/2 cup Vegetable oil
1tsp ghee
For the chicken:
900 grams chicken, cut into pieces
1/2 tbsp paprika
1/2 tbsp tomato paste
1 tablespoon oil
For garnish:
Fried almonds
Instructions:
1. Prepare the chicken for baking:
1. Preheat your oven to 180°C (350°F).
2. In a small bowl, mix 1/2 tbsp paprika, 1/2 tbsp tomato paste, and 1 tbsp oil. Set aside.
2. Prepare the rice and chicken:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
2. In a large pot, heat 1/2 cup oil over medium heat.
3. Add the chopped onions and sauté until golden brown.
4. Add the minced garlic, green chilies, bay leaf, cloves, cardamom pods, cinnamon sticks, dry lemon, paprika, and turmeric. Sauté for a few minutes until fragrant.
5. Add the grated carrot and chopped tomato. Sauté until the tomato softens.
6. Add the chicken pieces and cook for about 10 minutes, stirring occasionally.
7. Add 4 cups of water to the pot. Bring to a boil, then reduce the heat and let it simmer until the chicken is cooked through.
3. Bake the chicken:
1. Remove the cooked chicken pieces from the pot and place them on a baking tray.
2. Apply the paprika and tomato paste mixture prepared earlier to the chicken pieces.
3. Bake in the preheated oven for 20-25 minutes until the chicken is nicely browned.
4. Cook the rice:
1. After removing the chicken from the pot, add the soaked and drained rice to the pot with the remaining broth.
2. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
5. Combine everything:
1. Once the rice is cooked, fluff it with a fork.
2. Transfer the rice to a large serving platter.
3. Place the baked chicken pieces on top of the rice.
6. Garnish:
Fry the almonds in a small amount of oil or ghee until golden brown. Sprinkle them over the rice and chicken.
7. Serve:
Serve the Kabsa hot, with a side of yogurt or a fresh salad.
