1 Kg Mutton
1 Kg washed & Soaked Rice
300gms Yogurt /curd
1 tbsp Red Chilli Powder
1 tbsp Salt
1/2 cup Oil
1/2 cup ghee (pure)
1 tbsp Ginger Paste
1 tbsp Garlic Paste
1/2 litre Milk
1 litre Water
2 pinch Saffron strands
1 pinch YellowFood Color
1 tbsp Rose Water
Fine powdered Spices:
2 tbsp Fennel Seeds
1 tbsp Black Pepper Corns
6-7 Green Cardamom
7-8 Cloves
2 Black Cardamom
Few Cinnamon Sticks small pieces
1/4 of a Nutmeg
3-4 Mace blades
Crushed Spices:
1 tbsp Fennel Seeds
1 tbsp Cumin seeds
5-6 Green Cardamom
2-3 blades Mace small piece
Few Cinnamon small sticks
1 Black Cardamom
For Boiling Rice:
4 litre Water
4 tbsp Salt (to taste Rice)
4-5 small Bay Leaves
Orange food color (optional)
1 tbsp Kewra water (optional)

I absolutely loved the video so well presented. Love awadhi cuisine / food. It has class. Its not too spicy n masaledar . Its like morsels of heaven in d mouth. Well those who dont know much abt lucknowi food or awadhi cuisine may give u nonsense comments but one shd be a versatile foodie who knows the east west north south of india. I love biryani and always this style not all that spicy masalas n khadey masale . Infact d calcutta biryani comes a bit close to the awadhi style. Hi as said earlier i tried this biryani today. Did d dried masala prep wrk yest so it doesnt take too long. N it turned out awesomely droolicious. I felt so proud of myself. I had recently been to itc grand maratha, dum pukth restraunt n had a biryani there at the most frightful cost n it wasnt even 2/10. So from dat day i decided ill do yr recipe n call my friend over for lunch. It was one of d finest subtle yet classy biryani iv made in this awadhi style n to my luck i hv stock of all the food ithars thats needed. Im like beaming like a light bulb. I served it with boondi n pomegranates raita , onion lacchas n shahi phirni not missing d gold vark. N i asked my friend...now tell me who is better me or d 5* overrated itc !!! I am from Mumbai, we have been visiting our Nana-Nani in Lucknow (Gomti Nagar) since my mother got married at shifted to Mumbai in 1999. Every year either during Summer or Winter break we visit Lucknow and everything is memorable down from packing bags for the 24 hour train trip to hugging our grand parents when we leave back for Mumbai. That whole 30 days filled with enjoyment and frequent visit to Old Lucknow to try Raheem Nihari, Idrees Biryani, Tunday Kebab, Makhan Malai, Chicken Barra, etc. especially after ammi's exhausting shopping spree in Nakhas (including local chaat and desi Chinese). Everything about this video is a nostalgia. From flawless Urdu, the Biryani recipe to the anecdotes mentioned while cooking. My eyes moisten up every time I watch a video related to Lucknow. Didi I'm from Kolkata. Biryani here is greatly influenced by Awadhi cuisine. All thanks to Nawab Wajid Ali Shah. The flavour and texture of Kolkata Biryani is exactly the same as Lukhnowi Biryani. Even the spices are same. 💙

Exactly..some minor differences are that in Kolkata they use mawa/khoa or even milk powder instead of milk, add potatoes and aloo Bukhara..but other ingredients and techniques are same. In fact, leading restaurant owners like the owners of Aminia are from Lucknow only
