Use the correct juice..what he made was a Key west Style lime pie...not key lime. I love citrus of all kinds so this is an automatic win. Appreciate when options are given and variation and experimentation are encouraged. Pro-tips for getting the most out of your citrus: To maximise juice yield, especially from limes or lemons, sit them in hot water for a while then firmly rolling them on a hard surface before cutting into them. Even if the recipe doesn't call for it, zest them anyway, freeze, dehydrate and even powder it for later use. Dried peels are not only a culinary delight in spice mixes and salt rubs but the volatile oils they store also make them excellent additions to bushcraft fire starter supplies or aromatic potpourris. Make candied peel from thicker zest strips or use for making marmalade. Preserve strips and any left over juice in salt like Moroccan lemons. More surface area equals more flavour, infuse fine zest in coconut milk/milk or cream before straining. Make smooth icecream with all that citrusy flavour without worrying about acidity, curdling or excess liquid. Infuse spirits directly or make cordials and syrups for summer quenchers or to liven up your cocktails. Get more use out of reamed lemon or lime halves by inverting them a little and sprinkling them with salt and/or bicarb soda to create an eco-friendly mildly abrasive cleaning aid for your chopping boards, taps and sink. It sanitizes, polishes and deodorises surfaces and can be composted after use.

So I just made your recipe of this and it might be the best key lime pie i have ever had, I especially like how you showed us how to actually gauge the doneness with more than just a fixed time because the filling turned out perfect: creamy, yet firm enough to not fall out of the pie crust. I used a pre-baked graham cracker crust which was both a blessing and a curse because it was thin and not very flavorful, yet that also let the filling shine more while giving crunch.

Pro Tip for covering custards like these at 7:13 Use "butter papers", the papers that wrap sticks of butter. Instead of throwing the papers away, keep the papers in a little pile in the fridge to use for covering custards like this. The butter residue left over on the papers prevents them from sticking to the custard and provide a better seal, helping to prevent a skin or condensation from forming on the custard when chilling in the fridge.

I love making key lime pie, I've never tried it in Florida with their sacred limes but my dad came back ranting and raving about how good it was, so I made some (with just regular Tesco limes) and it's amazing, tip for brits use any old brand of digestive biscuits, the recipe I use states 18 graham crackers, I usually use like 10ish digestives. When you mix in the butter you can usually tell if you've got too much or too little :)

I made this pie using real key limes (managed to find some at a local grocery), and if you are having trouble juicing them because they’re so small, I was able to cut them in half and use a garlic press over a fine mesh strainer to get the juice out. Don’t press too hard or the juice will fly everywhere except the bowl you’re squeezing into

Why are you vegan tho? If you are vegan by choice, or you don't play with the animal product because of the way they are retrieved, sad news for your friend... You HAVE to eat meat and dairy (unless you have medical issues). Humans are omnivores, that means that we eat pretty much everything. But because we eat pretty much everything, we also, have, to eat pretty much everything. It's what our body was made to do. You need meat and dairy in your life. As of now, there are no good alternatives. Maybe before 2080, or as early as 2050, we might have actually good options.

@@jollyholly106 Look Herbivores have a more complex digestive system then ours, and they are able to survive and thrive on the plants they eat, because their body was MADE to eat plants their whole entire life. They can eat leaves, we can too, but they get the most nutrition from those leaves, we barely get any. Similarly, carnivores can eat raw meat of any kind because their body was made to eat raw meat, and get the nutrition from it. If we were to eat raw meat we would be sick in the hospital. Herbivores and carnivores have able to remain the way they eat, from their ancestors to them currently, they haven't changed their diet once. Our digestive system is not as complex as theirs, hence we can't get the same nutrition they can get from their diet. We can't get crucial nutrition from plants, but meat are able to provide those other proteins. Similarly, meat doesn't have as much nutrition or vitamins we need, hence we get them from plants. Our ancestors diet included meat, water, fruits and some vegetables. And their lifestyle remained for thousands of year, so their bodies evolved to fit their lifestyle. They were able to get all their nutritional needs from those food. Those food contained things we still need in our lives, and we need them to stay fit. How do you expect a vegan who has never ate meat to be tall, or strong? They have basically no proteins. It's near impossible for them to be fit. If they want to be fit or strong, they have to eat EVERYTHING. Meat, dairy, fruits, vegetables, water, sugar, oils, etc. We currently have no good substitutes for those things either. We have to wait at least a decade or more until better vegan substitutes. There currently is no way around it. Source? it's something called " School " and "Basic Biology" TL;DR : Go to school and learn science,3rd graders know it better then you do

Adam, regarding the vanguard slice... if you take a long flexible metal icing spatula, send the spatula down at a 45 degree angle, with a similar degree of tilt, making sure the flat side reaches down between the crast and the pan, until the spatula starts to bend on the bottom of the pan. Extend the bent part of the the spatula about 2 inches under the pie, and rotate the pie until the flex in the spatula is released. Takes practice but this method will cause the slice to pop right up and away from the dish. Also, when you take the pie pan out of the oven, let it cool on a baking rack or cookie rack, this helps the crust release from the dish.

Hey Adam, I made this pie! This was so heavenly, oh my GOODNESS. Just as a btw, cause this caused me a hot second of panic, in the description, it says that in a conventional oven, it should be baked at 250 F rather than 350. Not trying to be mean, just letting you know!

To get an even crust buy two pans of the same type. Make your crust, lay cellophane, and lay your crust between the two and compress.

Even in Florida genuine Key Limes are rare. There is almost no commercial production on the Keys and even those grown on the peninsula don't taste the same.

I lived in Lighthouse Point FL in the 70s. My neighbors had a key lime tree so. We used them in many inventive recipes. One of our favorites was to juice them and add about a cup of the juice to a bottle of Welch's Grape Juice. That was the most refreshing and thirst quenching drink ever!

I watched this video 3 times until finally making the pie myself and it was FANTASTIC. I’d recommend 1 to 1 1/8th cup lime juice and zest of 5-6 limes to make it really limey; just the way I like it. But the original recipe from the video is a really good, creamy, fairly sweet pie with a subtle lime flavor.

I tried this, it was absolutely delicious! You're right when you say salt is great in a graham cracker crust. Only change I made is I was able to get away with using only 4 eggs and less condensed milk, but it still tasted great :)

What he means when he says that is that it's the first slice that has no hope of looking good no matter what you do or how you cut it. But the other slices of pie have a better chance at looking good after it's been taken out of the pan.
