Good afternoon, I am currently starting investigation on Franciscan Landscapes, I'm a Master student on Urban Planning and I have a doubt. Regarding the timestamp of 3:24 I don't have the option of "Create label classes from symbology", I did every step and everything looks according to the video, is there any other possible option to proceed with this part? Placement option is not available for me. What might be the cause? Do I need a licensing for it?

The reason for Placement Option to be disabled is that you may be trying it while working on 'Map_3D' or on 3D layer. Make sure that you are on a 2D map frame rather than a 3D scene.
