That smile at the end says all, I'm trying this during this weekend. I got about 1.2 pounds of rainbow trout filets and a pound of walleye filets (just for my first try experiment on a pellet smoker). Thank you for the good information about brining, that was a step I looked over.

Okay...on the Bradley, with pecan wood. Turned out very nice. Flaky, not oily,(which surprised me because catfish is a lot more oily than rainbow trout), and the pecan smoke worked very nicely...... The sauce from Jeff's smoked catfish recipe is required. That really kicked it over the top. I didn't have any habanero sauce, so I used the Tabasco scorpion sauce......... Careful with that one it's extremely dangerous/fun, (2,000,000 on the scoville scale, Tami will like it). I took a bite, and did a little dance just like Jeff does it was so good......= )
