Bacteria will not grow in commercial mayo, despite what your grandmoters told you. This from the USDA: KNOWLEDGE ARTICLE People often think mayonnaise is the cause of foodborne illness from chilled foods such as chicken, tuna and egg salad or when spread on bread with luncheon meats in a sandwich. However, because mayonnaise is made with acid (vinegar or lemon juice), it tends to prevent bacterial growth. Usually it's the meat, poultry, fish or eggs in a sandwich kept out of the refrigerator for more than two hours that is the medium for bacteria to grow.

Thanks. That's one of the best potato salads. And while it is not "soft and comforting" like the east-european inspired ones (with eggs, mayonnaise, cream, sausages etc.) it is so much "happier".
