Ground beef is so versatile and it can be used in many amazing dishes like homemade hamburgers, tacos, lasagna, chile rellenos, picadillo con papas, and so much more.
In this video I'm going to walk you through my process of how I grind my brisket trimmings into ground beef and cover seven reasons why I grind my own ground beef.

No idea how much brisket costs. I just look at short date meat at the store. If I can get a roast half off, I take it home and grind it. Makes amazing tacos and burgers.

Arnie, When I do a double grind, I will take the first grind and form roughly shaped long "logs" that I place on a tray to firm back up in the freezer. The "log" shape will fit easily in the throat of the grinder just like the first grind cut strips and being firm from the cold, usually does not require the use of the stomper. I like to use a few ice cubes for my final push of meat out of the grinder to get the last bit out of the auger/plate area. I recently found your channel and just love your videos!

brisket, or any well marbled cut will work, so buy what is on sale folks! Accountant here...I did the math, if you buy large cuts or meat or from a whole sale grocery (costco) def cheaper than already ground meat.

When I catch brisket on sale I usually buy several of them to use for grinding. Some people think what in the world would you take expensive meat and grind it for...thats not the case, especially if you catch brisket on sale you can get it for less than $2 per pound...that is way cheaper than good ground beef per pound. And like Arnie says, you know whats in it. You can even separate the fat you dont use and save it for sausage making etc.

Wow I just got my notice from Academy that my grinder has arrived for pickup and you post this lol. Already got my sausage stuffer. Think I’ll be busy this weekend. You didn’t actually say it but that’s a great tip for freezing ground meat…after bagging it smash it flat just as you did. It’s easier to store and thaws faster when you need it. Need me some more OG I’m almost out!

I just ground up 6 pounds of brisket flat in less tha a minute. Saved the 8 pound point for a roast. The brisket was 2.46 a pound. No need to buy expensive brisket.

Great instructional video. The only thing I do different is I divide the point from the flat and get all of my burger just from the flat. The point is just to wonderful smoked or corned by itself. Thanks Arnie.

Arnie, I was inspired by you and my husband and I ground a brisket this weekend and made burgers....😮😮😮 WOW they were the best burgers we have ever had. I will only grind my own from now on. I can't go back. Also, we bought the briskets at $1.97 per lb. I got a Kitchen grinder attachment for my bday and that's what we used. What type of grinder are you using?

Recently, i have watched many videos on grinding brisket meat. Those other ones were fine. However, I enjoyed watching Arnie explain the various grades of brisket and how he prepares for his grind.

Gday Arnie as an ex butcher i have always made my own mince and sausages much better quality and so much cheaper. Love the fact that you use the brisket ....im so going to give that a try. I've always used what we call chuck steak or braising steak (from neck ) cheers Mate

Great video but you have made my mind up on getting the LEM #8 I was torn between the #12&#8 but after watching your video I’m convinced all I need is the #8 thanks

Do you do any additional steps to make the meat less crumbly, so it will stick together better? I have double ground brisket trimmings a few times and the burgers don't want to hold together well. If you mix the meat in a stand mixer will it improve things by generating more myosin in the mix?

X2 on a LEM "big bite" model. Arnie's is a #8 and I have the #12 which is a little bit bigger and more power. You can catch some decent sales this time of year if you watch their site and Amazon. LEM is not cheap, but it's well made.

My first time catching this channel and love it! I really don’t know anything about real cooking so my question is, can you marinate a brisket before grinding or is that not advisable? It does kind of seem like it wouldn’t be as versatile if you didn’t marinate it though.

Arni i ground whole brisket. I ran through with 10mm twice. My burgers crumbled on cooking. I did not use egg, I think I should have used the 4.5 mm on second grind. Your thoughts? LEM is high qualify equipment AND support.

Best burger you will ever eat is a fresh ground mix of 50% fatty brisket and 50% lean round. Grind it up twice and patty it out. Its insanely good.

@@llaverick7739 No I mean beef round. Top round as its sometimes called or beef round. Its very lean and flavorful but not juicy on its own. The fat and flavor from the brisket takes care of the juice.
