That's funny, I wanted to make pizza bread and all I found in the fridge was mexican cheese, I put some marinara sauce down on some bread and used the mexican cheese broken up with a fork until fluffy and topped it, in the toaster oven melted and crisped up great and tasted good, I was surprised ! Its funny you mentioned it, "One bite, everyone knows the rules" ! 🍕

Today on Easter I was tasked to make a dish for my in-laws (all of their family) for the first time today on Easter. I am a pretty good home cook, but I felt tremendous pressure to make and deliver something delicious on a day that was really special for them. Not only we’re the regular family members from Washington going to be there,but family from California were flying in as well. To say that I had no idea what to make and that I wasn’t stressing it would be a lie. Then I came across this video yesterday morning and it inspired me to make a dish my Tio used to make for me when we would go and visit him in Monterrey: Queso Flameado! Wifey’s family is from Oaxaca so they had never had the dish before. I asked my mom a huge favor and she made some of her famous Tortillas de Harina and in conjunction with the Queso Flameado . It was a huge hit with everyone (with that said I would have to say it’s mostly because of her tortillas which are to die for.) My father in law was pretty drunk after we had ate and said that after trying the tortillas and QF I was now his new favorite in-law lol. Thank you for inspiring home cooks like us everywhere Arnie. Your generous sharing of knowledge, the confidence you give us with your wise words, and the obvious humility and kindness you come across with make us all better cooks and in turn people that bring our families together to make memories. This is exactly what our favorite local Mexican restaurant serves with tortilla chips! It’s kind of buried in the menu, but my husband discovered it and we LOVE it! Sometimes we get takeout and just order 2 of these appetizers for our dinner. 😋 I had no idea it could be made so easily at home!

I made this years ago using the stove and oven to melt the cheese. I liked it but the chorizo is very oily. I thought I had made a mistake and not poured the oil off but realized that the recipe never said to do so. So I guess I made it correctly. I cut my corn tortillas into wedges, brushed them with a bit of oil and baked them to make chips. I'm glad that I found this video because I had been getting the urge to make this again for some time.

My favorite thing about chorizo is that seasoning is basically optional. It already tastes so good without anything. Definitely makes for a tasty easy dinner. I will definitely be trying this recipe tonight with some store bought salsa

I made this tonight for my three adult stepchildren, being the first time I've seen all of them together for the first time in 15 years. They loved it! I did add a shot of tequila to the chorizo, but I didn't trust myself enough to light it on fire, as this was my first time making it. This was a simple, delicious dish to make. Thank you for this!

@austindavis2406 the alcohol is still evaporating without the fire (alcohol evaporates around 78C, well below water). The flames just look cool and can be used as an indicator for how much is left but is completely unnecessary

I absolutely love queso flameado. I work at a very large bar in Texas that has a rotation of food trucks, one of them makes queso flameado. every time I'm in the break room people are wondering what I'm eating, and it wins them over every single time. Top notch dish!

It's crazy that this is a dish. My dad used to always make me chorizo quesadillas, and i thought it was just something he picked up randomly. I unfortunately dont like foody foods, but i will make this when i can finally eat. One thing i would highly recommend as it's how i ate my quesadillas is to add avocado with some salt. It will elevate this to much much higher levels. I can almost taste it now.... i can't wait.

We made the choriqueso, but with a variant: We used 1 lb of chorizo with 2 lb of oaxaca cheese. We simmered the choizo first to drain off the grease while mixing the oaxaca cheese with milk and warmed it up in the microwave to mix the two. The chorizo will greatly thicken up the choirqueso, so one has to add a cup or more of milk. Our variant was to add in chopped anaheim, poblano, and jalapeno peppers as toppings.

In the 1980s there was a hole in the wall Mexican restaurant in Venice, CA called Los Amigos. My favorite dish was their chorizo and egg quesadilla - an incredible dish. Now I have (probably) have the recipe! Gracias Señor!

Thank you for this video, probably the best choriqueso tutorial available. Growing up in Laredo, choriqueso was always my family’s go-to appetizer when we went out. Anyone here remember an old restaurant by the mall, La Palapa? Delicious!

Hello Arnie, this dish looks delicious! I believe we don't have that chorizo you used in your recipe. But what I do have in my freezer is homemade chorizo that I made. Hopefully when I make this dish it will turn out as good as yours look!

I made this with vegetarian "soyrizo" and chilled out on the spices. HOLY CRAP IT WAS SO FREAKING GOOD! My wife and I pretty much took down the whole pan over the course of a couple of hours and I am HOOKED! Arnie, this was in-CREDIBLE. This will be served at gatherings and I will be the GOAT. Thanks!
