Just did my first harvest in my garden. The initial plan was to cook, as a lot of people do (what people typically do, at least here in Norway). Guess it will be cold pressing now. Thanks for the video, useful!

You can cook them too, you might now mind it. I’d try both ways so you can compare.

@foragerchef4141 ended up with cold pressing the first batch, after a week in the freezer. Followed a recipe that recommended 500ml water, 30 grams sugar per 500 grams of berries. That worked so well that I just processed the rest the same way. Also, it seems like a few days of storage kinda rounds off the flavour a bit. I may try less sugar next time.

Maybe in a juicer. But it will take a lot of them and it will be a mess. I haven’t tried it. Sorbet will be great.

@@audio323 I taste and describe it at the end of the video to contrast the cold pressed juice with the infusion, but I could have probably done a better job of being more specific. It The cold pressed juice starts out tannic and tart and will remind you of balsamic reduction. Finishes with a dark, ripe fruit flavor I'd compare to elderberries, but more rounded and rich, notes of cherry and apple, probably due to the fact that they're all of the plants in the Rosaceae family.
