We were planning to go in May/June 2020, but WUHAN-19 put an end to that and we had to cancel the trip. As far as I know Mongolia is still closed to foreign visitors. Yumjagin Tsedenbal was right - China sucks!

Well, generally it is not much different from the process used in Europe for ages. 1) Let milk go sour, 2) Beat it to make butter. Separate the butter, the rest is buttermilk. 3) Distill it - this was not done in Europe, and it is a funny addition :-) 4) Hot buttermilk will make curds. Strain them. 5) And you are left with cottage cheese ("tvaroh" as we call it in Czechia ). 6) Mongolians dry it to be hard as stone. We usually ate it, used it for baking and cooking, or let it age as cheese. It does not age the same way as rennet chees does, but you can get pretty interesting tastes too.

@@evernightdream676 Yes, I understand. We in Czechia have special name for it, "tvaroh". As I learned, Hungarians also have special term, "turó". Probably other nations have something similar. But there is no such term in English, and it is often called "cheese", or "cottage cheese" (but different cottage cheese then the one we can buy in plastic cups). "Curds" are also not the right term, because you make curds also by adding rennet to milk, as a first step of making classical cheese.

You need to venture out of UB. If you find a herdsman herding their sheep and goat, you can ask for aaruul. They are very friendly but that doesn’t mean they will give it to you for free. Have at least 100000 tugrik with you.

When I was nine, I bit into the aruul my grandma gave me. It was pretty hard but Im and was usually able to eat them pretty well no matter how hard but biting that one had bee a mistake. The moment I bit it, my teeth broke in half xD
