I'm from Turkey and it's a traditional dish for us too. But you can't find this dish at every city and when they have it, sometimes they don't do it good. Denizli is pretty known for this specific dish. Offal street food vendors are pretty common in Turkey and they're the jewels of night life (perfect drunk food) yet you can't find this dish in those vendors, they're mostly done in specialised places for this dish. Regrettably, I had this dish only once and I loved it. I would like to eat again. I approached it with timidly even though I like organ meat. Taste was awesome and very delicious. I bet Mongolians do it better, I would like to try it too. I guess Altai mountains never leave us no matter how far we go

In the middle east, the sheep head is saved for the special ones. In Iraq, in some feast or gathering, the sheep head is simply presented to the guest with highest social rank, a tribal leader for instance, or anyone that comes to your house and you have to show your generosity and respect. It is damn delicious, my mom cook it really well and Iraqi traditional bread is soaked in the resulted broth and it the bread is served in a big dish and the sheep head will top the bread, man, that is heavenly....

It is a modern (mainly European) construct to think that utilising these cuts or offal was anything due to necessity and scarcity. For most and pre industrialised Western culture, it was simple matter of fact. (Today for example, ox tongue is more expensive than beef fillet p/k in a lot of countries...)

While the entire family went straight to the ribs, sirloin, ham, my grandfather liked the meat located in the nape of the head. Insular Americans think that America is the heaven for anything. Truth be told, America is diversely cultured. Jack of all trades, master of none if you will. Mongolians didn't do much agriculture due to their nomadic culture, which resulted in mainly eating meat and dairy products, with the occasional foraged edible roots etc. The food culture was built this way because it was the food that they had at hand, and thus their people have mastered cooking the food they had available and make the most of it. In a way, individual cultures like this have the ability to shape coal into diamonds when it comes to food.
