Jerusalem Artichokes do not only make a beautiful sunflower, they also present us with food and medicine. In this video I tall about how versatile these beautiful plants are. All recipe details are below.
To find out more about making your own medicines take a look at my online Introduction to Herbal Medicine course - www.danusirish...
I also offer a transpersonal course which follows the Celtic Wheel of the Year and encourages a deep relationship with plant allies at every turn. Using druidic and shamanic techniques this course guides us towards healing ourselves and becoming more connected to the natural world and the Divine Feminine. Find out more here - www.danusirish...
I am very interested in the wild plants that offer so much in the way of medicine and healing, wisdom and guidance and connection to Mother Earth. My two books, The Weed Handbooks, offer a gentle introduction to the wild "weeds" and explain how these plants are so beneficial as well as how to work with them. You can find them here www.danusirish...
Thanks so much to Lol for filming and music. Lol's other music can be found here - lolhardimanmus... and on KZbin here -
/ @lolhardiman5247
Jerusalem Artichokes are a very versatile food and can be eaten raw, (sliced into salads and sandwiches); boiled, mashed, roasted or baked. They can be added to soups and stews or pureed. If you have any other ideas, please share.
I made a medicinal tincture by slicing each tuber into thin rounds and placed them in a clean jar. I covered them with vodka - but you could also use Apple Cider Vinegar - and this will sit for 6 weeks before straining out the Artichoke pieces. This medicine can be taken to benefit the digestive system, improving the liver and bile production, and replenishing the gut with prebiotic fibre. If you make a tincture using Apple Cider Vinegar, this can be used as a medicine - ie taking 5ml in a little water twice a day before meals; or you can add to salad dressings.
I also sliced and dried the tubers and we will chew one or two of these little slices each day to improve gut health.
Thank you so much for watching and I hope you have a wonderful week.

When I lived on my farmstead I grew sun chokes and often made a creamy, delicious potato and sun choke au gratin. Also, they were great raw in salads, and steamed and mashed like potatoes. My chickens would sometimes scratch them up and eat them, as well. You video caused me to miss sun chokes which cannot usually be found in markets. Love your videos. Lowell does a remarkable job of videoing the life of the garden and the sentient creatures therein.

I was only today discussing that we all need to eat some dirty and my Uncle has always said that we need to eat a ton of dirt before we die, with regard to keeping children clean and presentable. So with that, I quite agree with you about not washing this tuber as there are many benefits to not washing what we eat. Thank you for sharing this plant with us today Terri, I have only this year learned about this plant, but was unaware of its medical use. Once again a great film that you both have made, I look forward to seeing what else you film later.

I began growing them last year. I planted a handful of tubers in some dirt in the entry garden - mistake! ha ha ha They grew nearly 15 foot tall and so big that three adults joining hands barely covered the circumference. The tubers remind me a lot of water chestnuts. Last year I did not harvest them until the flowers began dying back and they were so plump. They were the size of red potatoes. This year I planted them for privacy. ha ha I will try making medicine with them this year. Thank you for sharing this information, Terri. Continued blessings. Peace, love and light from NW GA USA.

Don’t worry about it, they’ll come back. I planted 10 tubers last year. Harvested kilos and kilos of massive artichokes all through October/November/December. However, this year I pulled up over 50 that came up in the potato bed I put there. I thought I’d got them all! But no way. They are incredibly invasive, but I love them. They have continued coming up among the potatoes ever since (I put them up the other end of the allotment this year but they haven’t flowered yet) so I expect another containment battle! So abundant, I also did them in jars of pickles, lovely!

Danu, I was most impressed with how cleanly your farties emerged from the soil. Cleaning them is always my bane. However I leave them to soak in water first to ease that process. It’s said that peeling them eases the flatulence but who would bother with that chore? 😮😊 Not to mention loss of vital minerals 😊😊 However harvesting after an early frost or two reduces the ‘airy’ effect, & sweetens the flavour. My desire for them always causes me to jump the gun but reminds me, after eating them, that patience is a virtue rewarded 😊😊 Blessings be.

The unwashed pumpkin.. Can you clarify something for me, years ago I read that B12 is high in mushrooms because of the bacteria (soil) that cannot be completely washed off the gills (underside of mushroom). Many people actually suffer B12 deficiencies because produce is too clean today.. Another fascinating video, thank you so much. I wonder if they could be turned into a Hungarian Langos, could be rather nice.. the artichokes that is.

Thank you again Terri and Lol for another interesting video. Terri, please continue this video, documenting the food prep, the final tincture and the dehydrated herbs. Would it be possible to tincture this with ACV instead of alcohol? Alcohol is something we avoid bringing into our home. I am currently a student of herbal studies in Canada, and want to learn all I can about herb ingredients. Blessings to you both 🍁🐝🌻 from Canada. Also, could you reference one of your previous videos if you have any, to assist with upper respiratory issues? Canada is currently experiencing the worst season for 🔥wildfires in our history. With gratitude.
@DanusIrishHerbGarden
@DanusIrishHerbGarden Жыл бұрын
Hi Karen, I can show the dehydrated tubers but as for the food prep - just use like any root vegetable. You can of course use Apple Cider Vinegar in place of alcohol for any herbal tincture. I am so sorry to hear about the wildfires - terrible mismanagement! I hope they are put out soon and that people don't suffer. There are lots of respiratory herbs of course but I do not like to use a plant allopathically - and the plant would match the person and how they are reacting to the smoke. Something soothing like Plantain would be one to consider, Marshmallow perhaps. There isn't a one size fits all I'm afraid xx

Root artichokes are very 'farty' but good. The fact the wind is foul suggests cleansing. . . I grew up on globe artichokes, quite different from root. Once established they come back year after year. My father had a forest of them as do we. Once strong the roots can be split in quaters and replanted in well rotted manure to boost numbers. It's known in India that they are a complete food, Sister Mother Teresa of Avilia lived on only them for decades as do Vaisnava Monks. Be aware earwigs love to live in them so submerge in water before boiling. Bees and especially bumble bees just love their voluminous nectar production, one can smell it in the purple flowers. We call them Sunchokes. I have grown them for years. They get so tall! I have had mine in same spot for many years - I just harvest some and leave some tubers in the ground and they come back fine. Some years they don't flower - they don't flower here until October and some years we get a killing frost before they can flower - still produce! Your weather is much milder then ours. Have a great week and look forward to next Sunday video. Many Blessings from Vermont

My Dad grew Jerusalem Artichokes because it was good for diabetics. I would make a relish with them. Wish I had some now. It was so delicous. After hearing the medicinal benefits, the relish might be a good way to add a small amount to meals to aid digestion.

We have grown these in CT in two different locations - we took them when we moved! just 6 tubers were started and now we have at least 50 to 100 growing on our property - the voles and mice love them though - so best to harvest in late fall after a frost not spring for us! We found that we need to boil with some vinegar or lemon juice or slow bake at 350 for 90 minutes to help break down the inulin - causes some very painful gas in some. Eat just one wait 24 hours to see if you are sensitive...

Any ideas with figs! I've made jam, fig tart, just this minute drinking a fig smoothie, I've frozen some, given 4lb away and there are still more😂 and on the market yesterday he was charging £1 per fig, so we plan a deal with him next season because he's off on holiday this week🤦‍♀️. Would love to try drying but in the UK, so not much chance of leaving them dry in the sun😂. Artichokes are not what I thought was artichoke 🤔 now I'm wondering what is the thing I thought was one..... Like a giant cactus/succulent 🤷‍♀️

Can't help with figs, although in Spain they are sometimes served with meat. You are thinking of Globe Artichokes, the one like a giant succulent. These Jerusalem Artichokes are not artichokes. Confusing??😂

When I was a wee tiny kid, I used to dig a hole in the backyard and fill it with hose water, and then I would stir and stir and stir with a big spoon from the kitchen until it was a thick muddy soup. Then I would pour cereal in it and eat it. This always got me in so much trouble! One time my grannie came over and said "Oh just let her do it, she knows what she needs". Now as an adult looking back I can see that the only thing unhealthy about that was probably the cereal, ha ha!
