Make this Asian Rice Noodle Soup with Shrimp, fast and healthy!
Ingredients:
Protein:
1 Ib Shrimp (options: Tofu or chicken)
Produce:
Bok Choy
Carrots
Clove garlic
1 TB fresh ginger
1 bunch green onions
Variety of mushrooms
Liquids:
4 cups Vegetable or chicken broth (Unsalted)
2 Cups water
Condiments:
2 tb fish sauce
2 tb gluten free soy sauce
2 tb rice vinegar
2 tb sesame oil
4 Oz. Pad Thai rice noodles
Saute sesame oil, carrots, bok choy, ginger for 5 minutes
Add water and stock
Add mushrooms, bok choy greens and green onions
Cook eveything down
Add noodles
Once all cooked down: add rice vinegar then turn off heat
Enjoy!
