I got your cookbook for my birthday and every recipe has been a hit so far! My only suggestion is for your next book, I wish the "Claire Says" sections were more like your videos and not just general cooking tips. Her personality is a big part of your channel, I love hearing her reactions and thoughts about the dish. But your recipes never let me down Aaron! You have such a talent for using accessible ingredients to create authentic flavours. Keep doing your thing!

Hello Aaron and Claire, I am so excited to try this one. I have so many tomatoes green and ready to turn red very very soon. My garlic chives are nice and tall today also. The regular chives also. My chives are more than 25 years old as they just come up every year in the spring. I have cut the chives down two times this year and they are still growing back a third time. I do have one question? When I make the recipe I think it looks great I am so excited So I call for the taste tester "Claire" but no one ever comes. Am I saying it wrong or maybe I need a magic word?

Thanks for the video! Question I am allergic to seafood, so fish and oyster sauce are a no go, what can i substitute to get close to the right flavor, but won't kill me? Thanks

I’m a vegetarian and recently made some vegan fish sauce. Worked great in the cucumber kimchi I made a few weeks ago.

Instead of oyster sauce, you can simply add more soy sauce. And instead of fish sauce, you can use a vegan fish sauce, or Korean soup soy sauce (gukganjang, 국간장) as a substitute. The amazon link is in the description, so hope that helps! 🙌

I have been using hoisin sauce (the one I use has no seafood) for my allergic friend and it tastes great and he hasnt swollen up like he did when I used oyster sauce 😅

Salt. If you really think it needs the funk, look for a vegan oyster sauce. Those are the best substitutes I've found as a Korean American with a fish and shrimp allergy.

Won't the raw onions attract germs and bacteria if it's kept in room temp for nearly 4 hours? Onions are not supposed to be kept at room temp for more than 30min covered or uncovered. I don't understand how it won't go bad.

Just pull out what you need about 20 to 30 minutes before eating. They'll lose the refrigerator chill and taste better.
