This is actually not an exaggeration. My boyfriend grew up with a very limited Western palate and had a hard time getting used to eating vegetables, especially the more "exotic" ones. But gaji namul is one of those dishes he immediately loved before even thinking to ask what those weird purple squishy strands even are :'D (Also, happy ending: he enjoys a wide variety of veggies and cuisines by now... Korean cooking will do that to you ;))

@@durchschnitte My struggle is getting people to eat veggies lol. I'm from the states but lived abroad as a military kid and then joined myself and continued my travel. So your story gives me hope that i'll find my type of people who want to try veg! I grew up with it!

@@MzMaverick. Yeah I feel you! As a tip from what I found: most people who don't like veggies grew up with very boring, underseasoned, overcooked, steamed or boiled versions... which really hardly anyone is a fan of haha. Often it's all about how you prepare the vegetable. You can really blow somebody's mind with a nicely roasted, well seasoned broccoli or some aubergine with a killer dressing like Koreans do it. Fun fact - same goes for tofu :D

Bro, I grew up in Northern Wisconsin and never tried an avocado until I moved to Colorado at 21yo... it was 2011, and I wasn't just Googling everything I didn't know yet. I tried eating that bad boy rock hard. As I tried to cut into it I look at my roommate, who moved with me from Wisconsin, and asked if they were supposed to like bowling ball texture. He just says idk I think I have only had guacamole once, and I have never seen anyone just eat an avocado like that. I laugh at this situation often when I have avocado.

I was never the cook type of person but lately I've been enjoying cooking because of your recipes. not only because your recipes are easy to follow but also your reassurance that the dishes can still taste great even with alternative ingredients.. The Indonesian version is called balado terong (terong = eggplant), and much easier to make with 3 ingredients : chillies, onions/shallots and bit of garlic. Roughly blend/mash the 3 spices and fry before mixing with the steamed eggplants

I used hot chili for this dish, turn out pretty good and fry chopped garlic, chili and last green onion very quick I dont to eat raw garlic but love cooked garlic. then pour with the rest the sauce in the bowl is so good. thanks for sharing Aaron.

Actually the same sauce would work well on smashed cucumber. Just lightly smash cucumber large cubes and douse with sauce - done!

You can use any kind of eggplant. Korean/Asian eggplants are great for their tender skin and mild flavor, but American or Italian eggplants work well too! Hope you enjoy experimenting with this! 😍

Idle brain thinking right now... I wonder if this would work with zucchini. If you cook the zucchini the same way, it's got a similar texture to the eggplant... I've got a pile of zucchini to spare at the moment, maybe I'll try it tomorrow. :)

@@AaronandClaire I tried it tonight with dinner. I roasted the zucchini in the oven, and got some really nice, deep caramelization. I'd like a little more next time, and I think the zucchini needs bigger pieces, since really small ones turn too soft. But the flavor was absolutely wonderful and I ate all of what I made. (I only made one serving, just in case it didn't turn out well.) Thank you again! I really appreciate the tasty recipe.

You can grill it too. This is to make it easier to peel the skin off. Then flatten it for fried egg omelet (pinch of salt added ). You’ll be hooked.
