My life recently has taken a pretty rough turn. I was diagnosed with cancer last August, and then I lost my house last month because I can no longer work enough to support myself. I’m currently staying on my friends couch writing a list of things I’m thankful for, because sometimes finding happiness is like panning for gold; It might seem like you have a bowl full of shit, but when you take the time to look closely you’ll often be surprised by the wealth that’s right under your nose.

I am going through a hard time right now. Not necessarily in term of living habits, relations or other things that can be hurtful to oneself, but rather because I am in a difficult path where I don’t know if what my heart desires is truly ahead of the road I decided to take. I personally think your videos make me happy. I work and go home and sleep and doomscroll, rotting my brain away. I love drawing, and painting, im an avid writer, I’ve created since I was young. But lately being in college, pursuing a biochem degree, working in customer service, I feel like im losing my mind. Literally, im rotting away. Furthering my mind makes me happy. Getting smarter makes me happy. For me, your videos sometimes make me think about things I wouldn’t nortmally think about, things and ideas that spark more ideas. So yeah, I think that’s pretty cool

I love the camping and coffee videos. If you build another fire, it would be great to be able to see the process of collecting and stacking the kindling and wood before lighting it. I feel like the process of building the fire is something a lot of us may have nostalgic memories of. I have been experimenting with grinding and brewing coffee at home for a few years and have some tips if you are interested. If you brew your coffee with a somewhat random amount of beans, grind size, amount of water, water source, and steep time, you won't be able to figure out why the coffee sometimes tastes good and sometimes tastes bad. Dark roast coffee is more forgiving when it comes to brew method because a lot of the flavors have been roasted out of it. I don't care for dark roasts that much because they lose a lot of the distinguishing flavors of the different beans that I like and they taste kind of muddied. Light roast coffee will be more acidic and have more plant and fruity flavors. Medium roasts will have more toasted or nutty flavors. To make your coffee taste really good, you need to try and use precise measurements and try to brew in a consistent repeatable manner. I would recommend always using the same amount of water, however much fits in your cup or how much you want to drink. Try and always use the same thing to measure it so that you can keep it precise. I weigh my beans now, but you don't need to. You can just use a spoon, scoop, or fill the grinder to an exact level. Try and keep it as consistent as possible though because being off by just 4 or 5 beans when brewing a single cup can make it taste noticeably different. One of the most important things is how long you allow the grinds to steep in the water. The acidic flavors are extracted first and the bitter flavors later. You want a balance of both. If you use way too much coffee grounds for the amount of water you are using or steep for too short of a time, you will end up with acidic sour tasting coffee. If you steep for too long, you can extract too much and make it taste bitter. You shouldn't have any issues with acidity if you are using a dark roast though. It's best to make changes each time you brew and take notes about how much coffee you use and how long you steep for until you find what you like. You don't really need to take the grinder apart that often to clean it. I use it every day and just tap on it and then wipe out what I can with my fingers. I only take it apart to wash it probably every 4 or 6 months. This will allow you to figure out how fine you want the grinds and leave it set. I would also recommend grinding on the finer side with a hand grinder because it will make the grinds more uniform in size which will result in a better tasting coffee. I have never used an Aeropress, but you can try using two filters and see if that helps stop the water from flowing through before you press. Grinding the coffee finer will probably also help since it will clog up the filter a little. Or a guaranteed method would be to do what they call the "inverted method". With the Aeropress empty, put the plunger in a bit, maybe half an inch. Flip the whole thing upside down and stand it on the plunger side. With the filter removed, add your coffee grounds and water. You can now stir it and let it steep for as long as you want. When you are ready, screw the filter on, place your cup on the top (upside down), and flip the whole thing over so it is upright again and push the plunger down. There's lots of different ways to make coffee and you can do it however you want. I have always tried to keep it as cheap as possible. I like to buy the cheapest beans I can find when the big 2 pound bags go on sale and then tinker with the brew method to try and make the coffee taste as good as possible. This lets me try a lot of different beans to find what I like and then rank them and just buy whatever goes on sale that I liked. I currently have 9 different bags of beans. Also, I would recommend transferring some beans into a smaller airtight container and seal up the original bag real good and only open it when you need to refill the smaller container. I like to use small glass jars daily and seal the original bags well and put them in freezer bags. I weigh the beans on a cheap $10 digital scale that does a tenth of a gram, grind them in a $10 hand grinder, boil water in a glass measuring cup in the microwave, steep the coffee in the measuring cup, and then pour the coffee through a coffee filter in a ceramic funnel that sits on my cup. Another benefit of great tasting coffee is that you don't need cream or sugar. Knowing that I am cutting out the harmful sugar makes it even more enjoyable.

I like James Hoffmans aeropress method. You put the plunger on top right after you pour the water. Then pull it a little bit upwards to create vacuum. Let it sit for about 2 minutes. Then give it a gentle swirl. Let it sit for 30 seconds. Then press the plunger gently. I had the same problem with losing water while stirring. You don't have to with this method. It tastes good.

As a recommendation for not losing the water before extraction, invert the AeroPress with the cap facing up. Once you're ready to plunge, flip it back over (cap side down) then plunge.

Happiness is like holding water with your bare hands. Everyone has bigger or smaller hands, measuring the amount of water they can hold as a maximun capacity. Even if you have strong and resilient hands that clutch tightly to hold that happiness over time, time itself will make the water go away, needing constant replenishement of that water. Depression is like holding water with open hands, even with all the water in the world pouring over you, it wont be kept, you physically cant hold water with open hands and need to learn how to close them again. Right now, my hands are not very firm, water pours from time to time in between my fingers, thank you for replenishing a couple of drops.

I found that always thinking about the negatives of society tends to build resentment, even if you attempt to be optimistic about it. Now, I see something I don't like and laugh... what a world! I've sat down with people, and someone says something egotistical or some other phrase that reveals their humanity and I just chuckle. They stare at me, why did you laugh? I like math and things like that because it's the language of the universe. It's a genuine best guess from humanity that I can fully trust.
