Pickled herring is very common here in Sweden! People eat it at Easter, Midsummer and Christmas. there's a variety with mustard and several other flavours. Happy to see you enjoying it.

My mother is Dutch. As a kid I grew up eating “Rollmop” herrings. Basically the Vita stuff, but the traditional presentation of half-herring fillets being rolled up around the pickled onion strips and pinned with a toothpick. Still stored in jars but served as individual servings i.e. one rollmop is one serving.

I ate the wine sauce herring, which as you said, is pickled. Mine was wrapped around a pickle piece & there were onions in the sauce as well. There’s a German brand that was the best. Can’t find it anymore. My dad in the late 70’s had herring huge half fish fillets in brine. They came in a big plastic container. It was shaped like those round hornets nests.

Since you liked these different harrings you should go out and try Swedish harring. We practically eat it every holiday as of tradition. I don’t know if it’s available in the states but the best ones are from the ABBA brand!

If you love herring you should try German cream herring, it’s made with pickled herring, pickles, onion, apple and cream (or Joghurt). It’s delicious.

You could try stuff like maatjes/matjes which is a type of brined herring popular in the Netherlands, Germany and Sweden. I assume this wine sauced stuff is inspired by maatjes. There's a ton of variants but I'm not sure what's easy to get a hold of in the U.S. The Dutch variants have a stronger fish taste whereas the Swedish variants tend to use more spices and be sweeter. The latter sounds more similar to what you're eating.
