Their Latin differs slightly from the Latin of the romans back in the day as they adapted it to church Latin, which was also far more written than spoken afaik. True, kings and nobility were far more involved with the pope and the church in general but spoken word was usually a mix of French and the language of their country of origin depending on their conversational partner. Also they used French like we use English today, as a sort of international communication standard, not unlike I, a German bloke, use English to communicate with you.
