Thank you so much for being open about your ED struggles, you and i are on this boat together babes ❤ Anyways, my favorite ‘casserole’ recipe 2 Sweet Potato’s 2-3 Large apples Cinnamon Brown sugar Maple syrup (can be replaced with honey, idk how vegan honey would go though) Plant based heavy cream. really really simple; slice or cube the potatoes and apples, lay them on top of each other in an alternating by pattern. In a small saucepan, mix together about 1-2 tablespoons of cinnamon, a quarter cup of brown sugar, quarter cup of syrup, and half a cup of cream, and simmer until completely combined. Pour that mixture over the apple and sweet potato mosaic and then cover with tin foil to bake at 350 for about 25 minutes. Remove tin foil and broil at 400 for 3-5 minutes until golden brown And that’s my casserole (more like a deconstructed apple pie)
