With letters it makes sense because you're showing that you're multiplying the same letters but when I try to do this and multiply 3 matrices with actual numbers the products do not come out the same. It's even said in previous video that order matters when multiplying matrices even if both are 2x2 so how is it associative? Am I missing something?

www.khanacademy.org/math/precalculus/precalc-matrices That is all you need to know about matrices (including an introduction). However you may need to go back and master more basic algebra before trying to learn.
