Ingredients:
Raw rice / Idli rice - 1½ cup (I used Sona Masoori)
Grated coconut - 1 small coconut /
Jaggery - ½ kg
Ghee - 1 tbsp
Coconut bits - ¼ of a coconut
Cumin seeds - 1 tsp (Powdered)
Cardamom - 7(Powdered)
Salt
Steps:
Cover and cook washed rice adding 3 cups of water.
When it comes to a boil, cook on medium flame.
Melt jaggery in 2 cups of water.
When the rice is ¾ cooked, add coconut, ghee and salt.
Mix well.
Add jaggery syrup.
Increase the flame and cook till the mixture thickens.
Keep stirring.
Add cumin powder and cardamom powder.
Switch off.
Heat ghee in a pan and roast coconut bits till golden.
Add it to the rice and mix well.
Transfer it to a pate and let it cool.
Enjoy the pachoru.
